This Slow Cooker Beef and Broccoli is an easy weeknight meal made with tender beef and broccoli florets with mushrooms in a flavorful Asian-inspired sauce.

This is one of those recipes that happened on a whim. I bought a package of stew beef with intentions of making - you guessed it - stew! But my husband isn't a big fan of stew and I knew that leftovers would probably end up sitting in the fridge. So I pivoted. Instead, I decided to make beef and broccoli in the slow cooker.
I had fresh broccoli and mushrooms in the fridge and had also purchased a package of Lipton Beefy Onion Soup mix to make the stew. Along with a few other ingredients to create a sauce, we ended up with a pretty delicious dinner that night. I served it with a sesame seed garnish and rice on the side.
This time of year, when we're cleaning up after Christmas and preparing for the new year, it's nice to have some tasty slow cooker recipes on hand. Knowing that dinner's done while I'm tackling my day is always a great relief. Especially when there's little to no prep work involved and my slow cooker takes care of the cooking!
Slow Cooker Beef and Broccoli
Not only is this slow cooker recipe delicious, it's a budget-friendly meal as well. Something we can all appreciate after holiday spending! So take a break and let the slow cooker make this tender beef and broccoli with mushrooms in flavorful brown sauce for dinner.
We're going to go ahead and throw everything but the cornstarch slurry, mushrooms, and broccoli into the slow cooker. Season with salt and pepper, stir, then set the slow cooker for 8 hours on low temperature.
When there's 30 minutes left, add the cornstarch slurry, mushrooms, and broccoli. Do not put the lid back on the slow cooker! This will help the sauce thicken up.
Once the beef and broccoli is ready, garnish with sesame seeds and serve with rice on the side, if desired.
Slow Cooker Beef and Broccoli
Ingredients
- 1 package stew beef
- 1 cup beef broth
- 1 package Lipton Beefy Onion Soup Mix
- 1/2 cup soy sauce or coconut aminios
- 1 1/2 tbsp. brown sugar
- 2 garlic cloves minced or grated
- 1 tsp. ground ginger
- Salt and pepper to taste
- Cornstarch slurry 1 tbsp. cornstarch + 1 1/2 tbsps. water, stirred together
- 2-3 cups fresh broccoli florets
- 6 oz. white mushrooms sliced
- Sesame seeds to garnish
Instructions
- Add everything but the cornstarch slurry, broccoli, and mushrooms to the slow cooker. Season with salt and pepper and stir.
- Cover and set the slow cooker for 8 hours on low temperature.
- When there's 30 minutes remaining, add the cornstarch slurry, broccoli, and mushrooms to the slow cooker.
- Do not place the lid back on. This will help the sauce to thicken up.
- Once the beef and broccoli is ready, serve with sesame seeds to garnish and a side of rice, if desired.
If you're planning on serving this with rice, but you're like me and hate making rice, grab some microwaveable easy-cook pouches or quick cook rice. Then, serve this dish with your favorite Asian style condiments like Sriracha, chili crisp, or soy sauce.
