Spooky Halloween Fruit Salad

Looking to add a healthier option to your Halloween festivities? This Spooky Halloween Fruit Salad is made with a delicious mix of berries, grapes, dragon fruit, lychee "eyeballs," and candy covered strawberry "ghosts!"

Ingredients

  • 1 - 12 oz. bag white candy melts
  • Candy eyeballs
  • 1 lb. strawberries rinsed and dried
  • Seedless green grapes rinsed and dried
  • 1 - 15 oz. can lychees drained
  • 6 oz. blueberries rinsed and dried
  • 12 oz. raspberries rinsed and dried
  • 1 yellow dragon fruit peeled and chopped

Instructions

  • In a small pot, heat the candy melts over low heat. Stir continuously until smooth. Remove from heat.
  • Set aside about 3/4 of the strawberries. Remove stems and cut into quarters. Leave the stems on the remaining strawberries and dip in melted candy.
  • Place strawberries on wax paper, stem-side-down. Place two candy eyeballs on each strawberry. Let candy harden.
  • Place the grapes, raspberries, sliced strawberries, and dragon fruit on a platter or in a large bowl.
  • Stuff the lychees with blueberries and place on the platter. Add the remaining blueberries as well.
  • Place the candy covered "ghost" strawberries on top and serve. If not serving immediately, place in airtight container in the fridge.

Notes

I used yellow dragon fruit because I find it to be much tastier than the pink variety.  It's sweeter with more flavor.  However, it tends to be more expensive.  It's the end of the season, but you'll find them on sale throughout the fall.
