Remember that sweet tooth I've talked about? With October, November, and December coming up, it's a bad time for someone like me who's been majorly jonesing for some sweets lately!
First comes the candy and pumpkin desserts, then comes the pie (all kinds of pie!), and then the Christmas cookies. I'm trying my best to behave, but man, it's hard to do with month after month of tasty seasonal goodies!
So in-between the sugary indulgences, I like to beat my candy cravings with nature's candy instead - fruit. As part of my Monday meal prep this week, I decided to put together a fruit salad. But since it's October, I made it with a spooky spin (and a teeny touch of candy, just because)!
This fruit salad is very berry forward with a touch of the exotic. Everything's delicious, some of it's seasonal, and if you're throwing a Halloween party, it'll definitely be a hit! I used canned lychees and blueberries to create eyeballs, grapes, raspberries, dragon fruit, and strawberries. And because I wanted a spooky fruit salad, I turned some of the strawberries into white candy covered ghosts.
Spooky Halloween Fruit Salad
After giving all of my fruit a good soak, I let it dry. Then, I made the strawberry ghosts by dipping them into melted white candy melts and adding candy eyeballs. I put the lychee "eyeballs" together and cut up a yellow dragon fruit. Then, I mixed all the fruit together and added the strawberry ghosts on top. Easy, delicious, and so spooky cute!
The strawberry ghosts are so easy to make! I made 8 in total so I only needed about half a bag of white candy melts. I melted the candy in a small pot on the stovetop on low heat. Once melted, I took it off the heat.
Then, I dipped the strawberries into the melted candy. I placed the strawberries stem-side-down and added candy eyeballs and repeated with the rest of the strawberries.
As the strawberries were set to dry, I placed the grapes, raspberries, the rest of the strawberries, dragon fruit, and blueberries (with some set aside to make the lychee eyeballs) in a platter. A big bowl will do, too.
I gently mixed everything up, then made the lychee eyeballs. I drained the can of lychees and carefully pressed a blueberry into the lychee repeating until all of the lychees were stuffed. Then, I added them to the fruit salad.
Last but not least, I placed the candy dipped strawberry ghosts around the fruit salad. After the fruit salad's put together, serve it immediately or store it in the fridge.
Spooky Halloween Fruit Salad
Equipment
- 1 small pot
Ingredients
- 1 - 12 oz. bag white candy melts
- Candy eyeballs
- 1 lb. strawberries rinsed and dried
- Seedless green grapes rinsed and dried
- 1 - 15 oz. can lychees drained
- 6 oz. blueberries rinsed and dried
- 12 oz. raspberries rinsed and dried
- 1 yellow dragon fruit peeled and chopped
Instructions
- In a small pot, heat the candy melts over low heat. Stir continuously until smooth. Remove from heat.
- Set aside about 3/4 of the strawberries. Remove stems and cut into quarters. Leave the stems on the remaining strawberries and dip in melted candy.
- Place strawberries on wax paper, stem-side-down. Place two candy eyeballs on each strawberry. Let candy harden.
- Place the grapes, raspberries, sliced strawberries, and dragon fruit on a platter or in a large bowl.
- Stuff the lychees with blueberries and place on the platter. Add the remaining blueberries as well.
- Place the candy covered "ghost" strawberries on top and serve. If not serving immediately, place in airtight container in the fridge.
Notes
This fruit salad makes a lot! So it's perfect for Halloween gatherings. I was able to bring a container over to share with my parents and sister and still had a large container to spare for my fridge. Store the fruit salad in an airtight container in the fridge. It can also be divided into mason jars. Fruit salad will last 3 to 5 days in the fridge.
