Steak Un-Kebabs

This Steak Un-Kebabs recipe is all of the goodness of a summer barbecue kebab without the stick!

Ingredients

For the steak

  • Marinade homemade or bottled
  • 1 pound London broil fat trimmed and cut into chunks
  • 2 red bell peppers cut into chunks
  • 1 red onion cut into chunks
  • 2 cloves of garlic chopped
  • Salt and pepper to taste
  • Extra virgin olive oil

For the rice

  • 1 cup water
  • 1 cup beef broth
  • 1 cup brown rice

Instructions

  • Fill a pot with water and beef broth. Bring to a boil.
  • Add rice and reduce to a simmer. Let rice cook while starting steak and veggies.
  • Heat a cast iron skillet on medium.
  • Add your steak to the skillet and cook until it's to your liking.
  • Remove steak and set aside on a plate.
  • Add peppers, onion, and garlic to the skillet.
  • When veggies are just about softened, add steak back to the skillet.
  • Cook until steak is warm and serve over brown rice.

Notes

Marinade your steak in your favorite homemade or bottled marinade for at least six hours or overnight before cutting into chunks.
