Sweet Potato and Veggie Hummus Wrap

This Sweet Potato and Veggie Hummus Wrap is loaded with a rainbow of veggies like kale, onion, bell pepper, and sweet potato. It’s made on lavash flatbread with lemon garlic hummus and a sprinkle of feta cheese.

Ingredients

  • 1 lavash flatbread
  • 1-2 tbsp. lemon garlic hummus
  • 1-2 tbsp. crumbled feta cheese
  • 1/2 sweet potato cooked and mashed
  • 1/3 cup shredded kale
  • 1/4 cup red onion sliced thin
  • 1/4 cup red bell pepper sliced thin

Instructions

  • Place the lavash onto a plate or flat surface. Spread the hummus over the lavash and sprinkle with feta cheese.
  • Spoon the sweet potato onto the wrap. Then, follow with the kale, onion, and peppers.
  • Tuck in the ends of the lavash and roll up.
  • Cut the wrap in half and serve.
