Sweet Potato and Veggie Hummus Wrap

During the spring, I just want to get outside and stay outside!  While I'm outdoors enjoying the warm weather, the day can totally escape me!  The hours pass by and before I know it - oops - I've missed lunch!

This time of year, I pretty much rely on having different kinds of sandwich fixings in the house.  A quick, filling, and portable lunch, like a sandwich, is totally the way to go while I'm out enjoying the sunshine!

I'm a big fan of the sandwich wrap.  Just like loading up two slices of bread, a wrap can be made with all sorts of delicious fillings.  But unlike your average sandwich, a wrap is way more convenient for on-the-go eating!

Some of my favorite wraps are loaded with veggies. I recently decided to make a fresh veggie wrap using some of the produce I ordered through Hungryroot.  I filled the wrap with a rainbow of veggies, like sweet potato, kale, onion, and bell pepper.  But before rolling everything up, I slathered a lavash wrap with lemon garlic hummus and added a sprinkle of feta cheese.

Sweet Potato and Veggie Hummus Wrap

Not only is this wrap fresh and delicious, it's a great way to use up a leftover roasted or baked sweet potato or those veggies taking up room in the fridge.  Plus, it takes minutes to make so you can wrap everything up and get back outside!

The first thing we're going to do is prep our veggies. Slice the onion and peppers into thin strips and make sure the kale is chopped into small pieces.  If you don't have leftover cooked sweet potato, my favorite quick fix is a Microwave-Ready Sweet Potato.  Just pop it in the microwave for 6 minutes and done!

Once the sweet potato is ready, you can cut it into cubes or mash it up (I personally prefer it mashed).

Now, we can start putting our wrap together.  Grab a lavash, or your favorite wrap, and lay it flat on a plate.  Spread a nice layer of lemon garlic hummus onto the lavash.

Follow with a sprinkling of feta cheese.  I like to add it on top of the hummus so it kind of sticks to the wrap.

Spoon the sweet potato onto one side of the lavash and add the rest of the veggies on top.

Then, tuck in the ends of the wrap and roll up.  Cut the wrap in half and serve.

Ingredients
  

  • 1 lavash flatbread
  • 1-2 tbsp. lemon garlic hummus
  • 1-2 tbsp. crumbled feta cheese
  • 1/2 sweet potato cooked and mashed
  • 1/3 cup shredded kale
  • 1/4 cup red onion sliced thin
  • 1/4 cup red bell pepper sliced thin

Instructions
 

  • Place the lavash onto a plate or flat surface. Spread the hummus over the lavash and sprinkle with feta cheese.
  • Spoon the sweet potato onto the wrap. Then, follow with the kale, onion, and peppers.
  • Tuck in the ends of the lavash and roll up.
  • Cut the wrap in half and serve.
