Italian Hoagie Skewers

These Italian Hoagie Skewers are the best of an Italian sandwich on a stick! They're easy party food made with a delicious combo of meats, cheeses, and all the sub style fixings!

It's barbecue season and once again time to gather in the backyard, throw on some music, soak up some sunshine, and nosh on some outdoor party foods!  Some of the easiest party foods include sandwich trays and cold salads.  If you invite me to a backyard party, I'm probably going to show up with one of those.  Easy-to-make, crowd pleasers are my jam.

Since we'll be celebrating those unofficial summer holidays and a ton of birthdays soon, I'm already thinking about what I can contribute to the menu.  So how about taking a classic sandwich, like an Italian hoagie, and turning it into a fun skewer you could eat on the stick or off the stick like a salad?

Just like an Italian sub, these skewers are layered with meats, cheese, and all the fixings.  Grab some bamboo skewers and stack cubes of Italian bread, salami, ham, pepperoni, mozzarella, lettuce, tomatoes, and peppers.  Finish them off with a drizzle of oil, vinegar, basil, and oregano and serve them alongside your favorite BBQ appetizers.

I wouldn't suggest making these skewers ahead of time since the bread would get soggy.  For the same reason, I would avoid drizzling the oil and vinegar combo until you're ready to serve.  And if you're like me and always need extra vinegar on your sub, make sure to leave some of that mixture on the side for drizzling or dipping!

The only ingredients that really need prepping in this recipe are the bread and lettuce.  Everything else can be added to the skewers as is.

If desired, add the cubed bread to a skillet and toast over medium heat.  Once the bread feels crisp to the touch, or looks golden brown, take it off the heat.

Once your ingredients are ready, begin layering them on bamboo skewers.  To add the meat, fold the slices in half and then in half again.  Then, slide them onto the skewer with the rest of the ingredients.

Then, mix the oil, vinegar, basil, oregano, and salt and pepper in a small bowl.  You could also just use a bottle of store bought sub dressing.

Drizzle the mixture on top of the skewers and serve immediately.

Ingredients
  

For the skewers:

  • 1/2 loaf Italian bread cut into 1 inch cubes
  • 4 oz. salami
  • 4 oz. ham
  • 4 oz. sandwich pepperoni
  • 1/2 cup mozzarella cubed
  • 10-12 grape tomatoes
  • 10-12 whole pepperoncinis
  • Lettuce cut into chunks or small slices
  • Bamboo skewers

For the dressing:

  • 2 tbsp. olive oil
  • 1/2 cup red wine vinegar
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • Salt and pepper to taste

Instructions
 

For the skewers:

  • If desired, toast the cubed bread in a skillet over medium heat for about 3-5 minutes, or until bread is crisp and golden brown.
  • Layer the ingredients onto the bamboo skewers.

For the dressing:

  • Mix ingredients in a small bowl.
  • Drizzle dressing over the skewers.
  • Serve skewers immediately with extra dressing on the side, if desired.

I don't know about you, but I find that appetizers are more fun to eat when they're on a stick.  These hoagie skewers are perfect for outdoor gatherings like barbecues, beach parties (no sand in your sandwich!), and picnics!
