Vietnamese Shrimp Noodle Salad

This Vietnamese Shrimp Noodle Salad is a light dish that’s full of fresh flavor. It’s made with wholesome ingredients and a homemade lime-garlic dressing that’s sweetened with Truvia® Natural Sweetener.

Ingredients

For the dressing

  • Juice of 1 lime
  • 2 tbsp. apple cider vinegar
  • 1 garlic clove minced
  • Splash of sesame oil
  • 1 tbsp. extra virgin olive oil
  • 1 1/2 packets of Truvia Natural Sweetener
  • 1/4 tsp. ground ginger
  • 1 tsp. fresh cilantro chopped
  • Pinch of salt

For the salad

  • 4 cups chopped Romaine lettuce
  • 1/2 bundle rice noodles cooked according to package, rinsed and drained
  • 1/2 cup cucumber seeds removed and diced
  • 2/3 cup cherry tomatoes quartered
  • 1 tbsp. chopped green onion
  • 1 cup cooked large shrimp
  • 1/3 cup unsalted roasted peanuts
  • Lime-garlic dressing

Instructions

For the dressing

  • Add all of the ingredients to a medium bowl.
  • Whisk until combined.

For the salad

  • In a large bowl, combine Romaine lettuce and rice noodles together.
  • Add in the veggies and toss to combine.
  • Pour the dressing over the salad and toss once again.
