Ingredients
For the dressing
Juice of 1 lime
2tbsp.apple cider vinegar
1garlic cloveminced
Splash of sesame oil
1tbsp.extra virgin olive oil
1 1/2packets of Truvia Natural Sweetener
1/4tsp.ground ginger
1tsp.fresh cilantrochopped
Pinchof salt
For the salad
4cupschopped Romaine lettuce
1/2bundle rice noodlescooked according to package, rinsed and drained
1/2cupcucumberseeds removed and diced
2/3cupcherry tomatoesquartered
1tbsp.chopped green onion
1cupcooked large shrimp
1/3cupunsalted roasted peanuts

Instructions
For the dressing
Add all of the ingredients to a medium bowl.
Whisk until combined.
For the salad
In a large bowl, combine Romaine lettuce and rice noodles together.
Add in the veggies and toss to combine.
Pour the dressing over the salad and toss once again.
