Here we are again.  We’re fresh into a new year and, like most people, it’s a goal of mine to make better choices for myself this year.  At the beginning of last year, I started to make small changes to my eating habits and felt amazing!  At least for the first half of the year. As the year went on, some of my old habits crept their way back onto my plate.  With a new start in front of me, I’m looking to pick up where I left off. This year, I’m going to be mindful about the way I eat so I can be the best version of myself.

As last year ended, I made room in our kitchen for lots of wholesome ingredients.  Now, our kitchen is stocked with nourishing ingredients and better alternatives to some of the foods we eat.  My sweet tooth definitely got the best of me over the holidays.  I overindulged in Christmas cookies and other holidays treats.  In order to curb my sweet tooth and reduce my sugar intake, I’ve switched to Truvia Natural Sweetener.  Now, we have no excuses not to eat better this year!

Truvia Natural Sweetener is a natural sweetener made from the leaves of the stevia plant.  It can easily be incorporated into your favorite simple recipes. One packet of Truvia Natural Sweetener (or ¾ teaspoon) provides the same sweetness as two teaspoons of sugar to recipes!  It’s a great zero-calorie sugar alternative that works well in recipes, like homemade salad dressings.

Last summer, I went to a popular Asian restaurant and had the most amazing Vietnamese Noodle Salad! The salad was made with rice noodles, fresh veggies, crunchy peanuts, and shrimp.  Then, it was dressed with a delicious lime dressing!  This salad was simple enough to recreate at home.  So I headed to ACME to pick up ingredients to make this flavorful salad with a sweet, homemade lime-garlic dressing.

Ingredients
  

For the dressing

  • Juice of 1 lime
  • 2 tbsp. apple cider vinegar
  • 1 garlic clove minced
  • Splash of sesame oil
  • 1 tbsp. extra virgin olive oil
  • 1 1/2 packets of Truvia Natural Sweetener
  • 1/4 tsp. ground ginger
  • 1 tsp. fresh cilantro chopped
  • Pinch of salt

For the salad

  • 4 cups chopped Romaine lettuce
  • 1/2 bundle rice noodles cooked according to package, rinsed and drained
  • 1/2 cup cucumber seeds removed and diced
  • 2/3 cup cherry tomatoes quartered
  • 1 tbsp. chopped green onion
  • 1 cup cooked large shrimp
  • 1/3 cup unsalted roasted peanuts
  • Lime-garlic dressing

Instructions
 

For the dressing

  • Add all of the ingredients to a medium bowl.
  • Whisk until combined.

For the salad

  • In a large bowl, combine Romaine lettuce and rice noodles together.
  • Add in the veggies and toss to combine.
  • Pour the dressing over the salad and toss once again.

This salad is one that gets better as it sits and soaks up all of the flavors.  Make it early in the day to serve for dinner!  Not a fan of shrimp?  Add chicken to this salad instead.  This recipe makes quite a large salad, so it’s perfect for meal prepping, too!
