Cheese Tortellini Chicken Soup

Homemade chicken soup is the ultimate comfort food. It gets an extra boost of comfort with the addition of cheese tortellini, making it a satisfying and cozy meal full of veggies, seasonings, and shredded rotisserie chicken.

Soup season is officially here and it's been delicious so far! From brothy noodles to hearty homemade soups, I've definitely been getting my fill. I've been eating a lot of instant noodle soups lately, but was totally craving one of the homemade soups I made recently. I made homemade chicken soup, but instead of adding noodles, I added cheese tortellini instead.

When I shared a pic of my tortellini chicken soup on Instagram, a friend asked if I had the recipe on my website. I didn't at the time, but I knew I had to make it again and hit publish on the recipe. Not a problem! Since I finished my first batch of soup in just a matter of days, I jumped at the chance to make it again!

I mean, we all know that chicken soup is totally comforting on a cold day. And chicken noodle soup is extra comforting. But adding cheesy tortellini to a warm bowl of homemade chicken soup makes it the ultimate comfort food! Sprinkle a bit of grated Parmesan cheese on top and you've got yourself quite the tasty bowl of amped up chicken soup!

Cheese Tortellini Chicken Soup

I always make my chicken soup with shredded rotisserie chicken. It just tastes better, in my opinion, and has a better texture - especially for soup! Then, I added a mixture of veggies and seasonings, poured in broth (usually homemade), and added cheese tortellini at the end.

This soup is relatively easy to make. In a large pot, heat olive oil over medium heat. Then, add the celery, carrots, onion, and garlic to the pot. Cook until the onion has become translucent and the garlic, celery, and carrots have softened. Stir in the rotisserie chicken.

Next, we're going to pour in the chicken broth and stir in the seasonings. Now, it might seem weird to put ginger and turmeric into chicken soup, but trust me - it's good. It adds a subtle amount of flavor, but gives your soup an extra bit of immune boosting properties.

Bring the soup to a boil, then lower to a simmer. Simmer for at least 30 minutes. The longer the soup cooks, the better it will be!

Once the soup is just about ready, cook the tortellini in another pot as directed on the package. Drain and stir into the soup.

Serve the soup immediately with grated cheese on top, if desired.

  • 1 large pot or Dutch oven

Ingredients
  

  • 1 tbsp. olive oil extra virgin
  • 2 celery stalks chopped
  • 2 carrots peeled and sliced
  • 1 small yellow onion diced
  • 4 cloves garlic minced
  • 3 cups shredded rotisserie chicken
  • 6 cups chicken broth
  • 1 tsp. dried oregano
  • 1 bay leaf
  • Optional: pinch of ground ginger, turmeric
  • Salt and pepper to taste
  • 8.8 oz. frozen cheese tortellini
  • Grated Parmesan cheese for topping

Instructions
 

  • Heat olive oil in a large pot, or Dutch oven, over medium heat.
  • Add celery, carrots, onion, and garlic to the pot. Saute until onion becomes translucent and garlic, celery, and carrots have softened. Stir in chicken.
  • Pour in chicken broth and stir in seasonings.
  • Bring soup to a boil, then lower to a simmer. Simmer soup for at least 30 minutes.
  • When soup is close to ready, cook tortellini in separate pot, according to package. Drain and stir into soup.
  • Serve soup immediately. Top with Parmesan cheese, if desired.

Notes

For the slow cooker:
  1. Add all ingredients to the slow cooker, except for the tortellini.
  2. Cook on low about 8 hours. Remove bay leaves.
  3. Cook tortellini according to package. Drain and stir into soup.
  4. Serve soup with Parmesan cheese on top.

How to Store this Cheese Tortellini Chicken Soup

If you're wondering if you can store this soup in the freezer, the answer is yes. But I would freeze the chicken soup without the tortellini. Cook the chicken soup, but don't add the tortellini. Allow the soup to cool completely and freeze. When you're ready to eat, heat the soup and cook the tortellini. Then, add the tortellini to the soup and enjoy!
