Chocolate Chip Pretzel Cookies

A couple weekends ago, I had such a craving for Italian cookies with sprinkles.  I didn't feel like leaving the house and going to the bakery to buy some.  So in my desperation, I searched my cabinet for ingredients and made a batch.  Not only was the recipe really simple to make, the cookies were delicious!

You know how Italian cookies tend to have a really crispy texture?  These cookies were crispy on the outside with a slight chew to them in the middle.  Perfection!  I might even be so bold to say that they were even better than the bakery!  Needless to say, they didn't last too long in our house.

The cookie dough came together so easy that I wanted to experiment with different flavors.  My friends at OMG! Pretzels recently sent me a box of assorted pretzel nuggets.  I immediately knew I wanted to make a sweet and salty cookie using the Italian cookie recipe.

Chocolate Chip Pretzel Cookies

This time, instead of rolling the cookie dough in sprinkles, I rolled the dough in a mix of mini chocolate chips and crushed Sweet & Salty Pretzels.  The pretzels add to cookie's crunch while the chocolate adds a richer layer of sweetness.  It's a winning combo in a winning cookie recipe!

The first thing we need to do is mix some of our dry ingredients together.  In a medium bowl, stir the flour, baking soda, and salt together.  Set aside.

Butter, oil, sugar, egg, and vanilla mixture in a metal mixing bowl.

In another bowl, cream the butter, oil, sugar, and powdered sugar together until it's fluffy.  Then, add the egg and vanilla, beating together just until it's combined.

Now, we can gradually start to add the dry ingredients into the butter and sugar mixture.  Mix just until a dough forms.  The dough will be soft and slightly sticky to the touch.

Once the dough has formed, wrap it in plastic wrap and stick it in the fridge to chill for at least an hour.

When the dough is ready, preheat the oven to 350 degrees and prepare a couple baking sheets with parchment paper.  Then, use an ice cream scoop or spoon to scoop the dough and roll it into balls.

In a small bowl, add the mini chocolate morsels and crushed Sweet & Salty OMG! Pretzels (you could use the Butterscotch variety, too).  Mix them together.  Then, roll the dough balls in the mixture and place on the baking sheets.

Bake the cookies for about 18 minutes, or until they've set in the middle and are golden brown around the edges.  Once done, cool on parchment paper or foil.

Then, they're ready to enjoy!  Serve or save in an airtight container for 3-5 days.

Ingredients
  

  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 sticks room temperature unsalted butter
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 tsps. vanilla extract
  • Approximately 1/2 cup mini semi-sweet chocolate morsels
  • Approximately 1/2 cup Sweet & Salty OMG! Pretzels crushed

Instructions
 

  • In a medium mixing bowl, combine the flour, baking soda, and salt. Set aside.
  • In another medium mixing bowl, cream the butter, oil, sugar, and powdered sugar together until fluffy.
  • Then, add the egg and vanilla, beating just until combined.
  • Gradually stir in the dry ingredients and continue to mix just until a dough forms. The dough will be soft.
  • Wrap the dough in plastic wrap and refrigerate for one hour.
  • Preheat the oven to 350 degrees and prepare 2 baking sheets with parchment paper.
  • Fill a small bowl with the mini chocolate morsels and crushed pretzels. Mix to combine.
  • Scoop the dough with an ice cream scoop or spoon and roll into balls.
  • Then, roll the dough balls in the chocolate and pretzel mixture.
  • Place the dough on the baking sheets, spacing about 2 inches apart.
  • Bake the cookies for 18 minutes, or until done in the middle and golden brown around the edges.
  • Cool on parchment paper or foil. Once completely cooled, store cookies in an airtight container for 3-5 days.
