I've had a minor obsession with fresh strawberries lately. Like I've been adding them to our grocery list ever since the calendar flipped to spring. Mainly I've been snacking on them - with kiwi fruit or a sprinkle of Tajín - or throwing them into smoothies. But recently, I remembered just how good they are in salads!
It's a great time to get creative with salads. Isn't it? So while I was without leftovers for lunch one day, I started digging through the fridge to find something to eat. I put together a pretty fantastic salad made with chicken, cucumbers, onions, strawberries, pecans, and blue cheese!

Not only do you get a delightful sweetness from the strawberries, you get crunch from the cucumbers, onions, and pecans, and some saltiness from the crumbled blue cheese.
Strawberry Chicken Salad with Cucumbers and Blue Cheese
Are you ready to meet your new favorite way to use up those strawberries sitting in your fridge? Let's chop, prep, and assemble what's sure to become one of your new favorite spring salads!
I used leftover chicken for this salad, but you could grill up a boneless, skinless chicken breast or warm up frozen grilled chicken strips. Just chop up the chicken into bite-size pieces once it's cooked.
Now, we need to chop up the rest of our ingredients and assemble our salad! So add the lettuce to a salad bowl. Then, add the cucumbers, onions, strawberries, pecans, and blue cheese. Toss to combine everything together.
We're going to need a dressing. Right? I honestly just use a bit of olive oil and balsamic vinegar on this. You know, keep it simple. But you could totally whip up this berry vinaigrette made with strawberries, olive oil, balsamic, and honey!
Drizzle some dressing on top and dig into this "berry" delicious salad!
Strawberry Chicken Salad with Cucumbers and Blue Cheese
Ingredients
- 1 head of Romaine lettuce washed and chopped
- 1 cup cooked chicken chopped
- 1 generous cup strawberries sliced
- 1 mini cucumber sliced thin
- 1/3 cup chopped pecans
- 1/4 cup red onion sliced thin
- 1/2 cup crumbled blue cheese
- Olive oil
- Balsamic vinegar
Instructions
- Add the Romaine lettuce, chicken, strawberries, cucumber, pecans, onion and onion to a salad bowl. Toss to incorporate all of the ingredients.
- Sprinkle the blue cheese on top of the salad and drizzle with olive oil and balsamic vinegar (or your favorite dressing.
- Serve immediately.
