With Thanksgiving up ahead, I cannot wait to indulge in all of those delicious side dishes. They’re truly my favorite part of the holiday feast! It’s sweet potato season and, with fresh sage still growing in the garden, this felt like the perfect opportunity to make some roasted sweet potatoes tossed in a sage butter. They’re salty, slightly sweet, and full of earthy, herbaceous flavor - a simple yet elegant Thanksgiving side dish that will easily fit right into your holiday menu.
While sweet potatoes with marshmallows often steal the spotlight this time of year, this easy roasted sweet potato recipe is a rustic and comforting take on a holiday side. Plus, with just a handful of ingredients, you can enjoy this flavorful dish any time of year - not just for Thanksgiving or Christmas!
If you're already planning to make marshmallow-topped sweet potatoes, you could easily make this dish with a white potato instead - like Yukon Gold or Russet potatoes. Sweet potatoes just happen to work so well to balance the earthy flavor of sage and the saltiness of butter. Best of all, this easy potato side dish comes together in about 30 minutes! Plus, if you're short on oven space, you can cook these potatoes in the air fryer as well.
Roasted Sweet Potatoes with Sage Butter
If you're looking for another savory side dish to add to your Thanksgiving menu, or just want a cozy, fall dish to make for dinner, this recipe is easy to prepare, full of seasonal flavor, and it's budget-friendly as well - something we can all appreciate this busy time of year! So let's get roasting and make this comforting, fall dish!
To start, we need to preheat the oven to 425 degrees. Peel and cube the sweet potatoes. Spread them onto a large baking sheet and toss with olive oil, salt, and pepper.
Roast the sweet potatoes for about 30 minutes, or until they're tender and slightly browned on the edges. Stir the potatoes halfway through cooking.
Towards the end of roasting, prepare the sage butter. In a small pot, melt the butter over medium-low heat. Add the sage leaves and garlic. Cook until the butter gets foamy, about 2-3 minutes. The garlic and sage should be fragrant. Allow the sage to get crispy as well.
Remove the potatoes from the oven and add to a mixing bowl. Pour the butter over the potatoes and toss to coat.
Add the potatoes to a serving dish. If desired, garnish with fresh sage leaves.

Roasted Sweet Potatoes with Sage Butter
Equipment
- 1 large baking sheet
- 1 medium mixing bowl
- 1 small pot
Ingredients
- 3-4 medium sweet potatoes peeled and cubed
- 2 tbsps. olive oil
- Salt and pepper to taste
- 3 tbsps. salted butter
- 6-8 fresh sage leaves finely chopped
- 2 garlic cloves minced or grated
Instructions
- Preheat oven to 425 degrees.
- Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly onto a baking sheet.
- Roast about 30 minutes, stirring halfway, until tender and browned around edges.
- Towards the end of roasting, melt the butter in a small pan over medium-low heat.
- Add sage and garlic, cooking 2-3 minutes. Butter should be foamy, sage and garlic should be fragrant, and sage leaves should be crispy.
- Remove potatoes from oven and place in mixing bowl. Toss with sage butter.
- Add potatoes to a serving dish, garnish with fresh sage leaves, and serve.
Notes
- Peel and cube potatoes, as instructed. Then, toss with olive oil, salt, and pepper, and place in air fryer basket.
- Cook at 400 degrees for about 10-12 minutes, shaking basket halfway through.
- Then, finish preparing as instructed above.
Leftover Sweet Potato Ideas
If you end up with leftover sweet potatoes, you could also reheat them the following day for dinner. But I totally suggest warming them up for breakfast and serving them with a fried egg. You could also add a little onion to the potatoes and create a nice breakfast hash. Or use them in a rice or quinoa bowl, or warm salad for lunch!
