My mom and I took a trip to Wegmans a few weeks ago, and while we were there, I grabbed something from their prepared salad section for lunch. One salad immediately caught my eye - their Protein Power Salad. It’s loaded with mixed greens, chickpeas, edamame, almonds, grilled chicken, guacamole, crumbled feta, and a balsamic vinaigrette.
I thoroughly enjoyed every single bite. And honestly, I haven’t stopped thinking about it since.
Since Wegmans is more of a once-in-a-while stop when I’m visiting my parents, I knew I had to recreate this high-protein salad at home. My copycat version stays pretty true to the original salad with just a couple of simple swaps - I used chopped rotisserie chicken for convenience and made my own balsamic dressing.
What I love about this salad is that it's not only flavorful, but it's filling without feeling too heavy. It's a well-balanced, protein-packed salad that comes together easily with a delicious mix of flavors and textures in every bite. Copycat Wegmans Protein Power Salad
If you've been looking for a healthy, wholesome salad to make at home, this copycat Wegmans Protein Power Salad might just become your new favorite. It can easily be prepped ahead of time for quick lunches throughout the week. Plus, some of the ingredients can either be homemade or bought premade at the grocery store.
The first step in making this salad is warming up the chicken. We're going to season it with lemon pepper seasoning and salt, just to give it a little flavor. Then, we're going to warm it up in a skillet, with a little olive oil, over medium heat.
Now, grab a salad bowl or plate and place the spring mix onto it. Start adding the chickpeas, edamame, feta cheese, almonds, and the chicken. Add a hefty dollop of guacamole on top.
Whip up a quick balsamic dressing in a small bowl. Whisk balsamic vinegar, olive oil, Dijon mustard, honey, and salt and pepper together. Drizzle it over the top of the salad.
Adjust the toppings and dressings, if desired, and enjoy the salad immediately.

Copycat Wegmans Protein Power Salad

- 1 large skillet
- 1 small bowl
Ingredients
For the salad:
- 1 tbsp. olive oil
- Lemon pepper to taste
- Salt to taste
- 1 cup rotisserie chicken shredded or chopped
- 2 cups spring mix greens
- 1/4 cup cooked and cooled shelled edamame
- 1/4 cup chickpeas rinsed and drained
- 1/4 cup roasted lightly salted whole almonds
- 1/4 cup feta cheese crumbled
- 1/2 cup guacamole store‑bought or homemade
For the dressing:
- 2 tbsps. balsamic vinegar
- 3 tbsps. extra virgin olive oil
- 1 tsp. Dijon mustard
- 1 tsp. honey
- Pinch of salt
- Fresh ground pepper to taste
Instructions
- Add olive oil to a skillet. Season chicken with lemon pepper and salt, to taste. Heat over medium-low just to warm. Once warmed through, remove from heat and set aside.
- In a salad bowl or plate, add the spring mix.
- Start topping with the chickpeas, edamame, almonds, feta cheese, and chicken.
- Add a dollop of guacamole on top.
- In a small bowl, whisk balsamic vinegar, olive oil, Dijon mustard, honey, salt and pepper together.
- Drizzle over the top of the salad.
- Adjust toppings and dressing as desired and serve immediately.

Ingredients- 1 ripe avocado
- 1 tsp fresh lime juice
- 1–2 tsp finely diced red onion (or yellow)
- 1 small clove garlic, minced
- Optional: 1 tbsp chopped fresh cilantro
- Salt and pepper, to taste
- Optional: Pinch of cayenne or smoked paprika, for a hint of spice
- Cut the avocado in half, removing the pit.
- Scoop the avocado into a bowl and mash with a fork until smooth. If desired, leave some small chunks for texture.
- Stir in lime juice, onion, garlic, cilantro (optional), salt, and pepper just to combine.
- Use immediately on salad and store any leftovers in an airtight container with plastic wrap tucked tightly over the top of the guacamole to prevent browning.
- Refrigerate up to 24 hours.
I feel like I did a pretty decent job recreating this copycat Wegmans Protein Power Salad. It hits all the right ingredient and flavor notes and is totally satisfying. I only made this recipe for one serving so I could put together a quick and easy lunch. But it’s just as simple to multiply if you want to share this high-protein salad with family or add it to your weekly meal prep.
