July in the garden is one of my favorite times of year. All of our hard work is finally starting to pay off. The flower beds are bursting with color, and the vegetable garden is thriving. Lately, I've been picking semi-ripe tomatoes almost every day, gathering basketfuls of peppers, and snipping fresh herbs whenever I need them. There's something incredibly satisfying about stepping into the backyard and harvesting ingredients for a meal.

July also means that Shark Week is just around the corner. And if you've been following Holoka Home for a while, you know that I truly enjoy diving into shark-themed content each year. This time, I wanted to keep things simple and on theme with a garden-to-table vibe. So I made a garden salsa with blue tortilla chips that's fresh and easy with a fun visual appeal.

Head to the garden for ingredients because this salsa is loaded with fresh tomatoes, peppers, onions, and herbs. Then, it's served with blue corn tortilla chips that give it a playful "shark in the water" presentation. It's an easy appetizer that's perfect for viewing parties, movie marathons, and summer snacking.

Shark Bite Chips and Fresh Salsa

This salsa is packed with bright summer flavor. The best part, though, is how you serve it. Tucking blue corn tortilla chips into the salsa makes it look like shark fins are gliding through the water. You get that fun Shark Week touch without a ton of extra effort.

Add the diced tomatoes, peppers, onions, garlic, and cilantro to a large mixing bowl and gently stir to combine. A basic fresh salsa recipe uses bell peppers and jalapeño, but I used what I currently have growing in the garden - Costa Rican sweet pepper (like a more flavorful bell pepper), a coolapeño (flavor of jalapeño without the heat), and a sweet burrito pepper for spice.

In a smaller bowl, add the lime juice, olive oil, cumin, and salt and pepper. Whisk together.

Pour the dressing over the salsa and toss to coat evenly. Then, chill in the fridge for at least 20 minutes to allow the flavors to come together.

Transfer the salsa to a shallow serving dish. Finish by standing blue corn tortilla chips upright in the salsa. They'll look like shark fins breaking through the ocean. Garnish with more fresh cilantro, if desired, and serve with extra blue corn tortilla chips on the side.

Ingredients
  

  • 1 cup tomatoes diced
  • 1/2 cup medium green bell pepper diced
  • 1 small red onion diced
  • 1 jalapeño seeded and minced, or heatless jalapeño
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh cilantro
  • 3-4 tbsps. lime juice
  • 1 tbsp. extra virgin olive oil
  • 1/4 tsp. ground cumin
  • Salt and pepper to taste
  • Blue corn tortilla chips for serving

Instructions
 

  • In a large mixing bowl, combine the diced tomatoes, pepper, onion, jalapeño, garlic, and cilantro.
  • In a smaller bowl, whisk the lime juice, olive oil, cumin, salt, and pepper.
  • Pour the dressing over the salsa and toss until coated.
  • Cover and chill in the fridge at least 20 minutes to allow the flavors to come together.
  • Transfer to a shallow serving bowl. Stand several tortilla chips upright throughout the salsa to resemble shark fins in the ocean.
  • Garnish salsa with extra fresh cilantro and serve immediately with extra tortilla chips on the side.

If you have leftover salsa, store it in an airtight container in the fridge for up to 4 days. Give it a stir before serving as the tomatoes will release some juice over time. Then, enjoy with tortilla chips, on top of tacos, or even spooned onto your morning eggs.
