I'm not on Facebook that much anymore. In fact, I try to stay away from it as much as possible. But I do like to look back at my memories. Recently, I found a brownie recipe that I had shared to my page a few years ago.
The brownies were made with Baileys Irish Cream and finished with ganache. I forgot that I had even saved that recipe, but immediately wanted to make them with a seasonal pumpkin twist.
Initially, the plan was to use Bailey's Pumpkin Spice in these brownies (I've used it before in this hot chocolate recipe). But I haven't been able to find it this year. Instead, I found a creamy pumpkin eggnog liqueur and decided to give it a try.
I figured that the flavor combination would be perfect for this time of year as we transition from fall into the holiday season. If you're looking for an easy dessert to serve for Thanksgiving, these brownies would be a festive and delicious addition to your spread.
Boozy Pumpkin Nog Brownies with Ganache
All you need to make these deliciously decadent brownies are a box of mix, some boozy pumpkin nog (or pumpkin liqueur or spiked eggnog), plus heavy cream and chocolate chips to make the ganache.
The first thing we need to do is mix up our brownie batter. Preheat the oven to 350 degrees and grease a 9" x 9" pan. The brownie mix is prepared according to the package. But instead of using water, it's replaced with the pumpkin nog.
Once the brownie batter is prepared, spread it into the pan. Then, bake for about 20-25 minutes, or until the center of the brownies is cooked through. Allow the brownies to cool completely.
When the brownies are cool, start the ganache. Add the chocolate chips to a bowl. Then, add the heavy cream and pumpkin nog to a small pot and heat over medium.
Once the pot comes to a boil, pour it over the chocolate chips. Let it sit for 3-5 minutes. Then, stir until the mixture is smooth.
Now, we're going to pour the ganache over the brownies and spread it evenly over the top. Allow the ganache to cool (you can even pop the brownies in the fridge if you want the ganache to set faster).
Then, all that's left to do is cut the brownies into squares and serve!
Boozy Pumpkin Nog Brownies with Ganache
Ingredients
For the brownies:
- 1 box milk chocolate brownie mix
- 3 tbsp. pumpkin nog liqueur
- 1/2 cup vegetable oil
- 2 eggs
For the ganache:
- 1 cup semi-sweet chocolate chips
- 1/3 cup heavy cream
- 1/3 cup pumpkin nog liqueur
Instructions
- Preheat oven to 350 degrees and grease a 9" x 9" pan.
- Stir the brownie mix, pumpkin nog, vegetable oil, and eggs together in a medium mixing bowl until combined.
- Spread brownie batter evenly into pan. Bake 20-25 minutes, or until a toothpick comes out clean from center of brownies.
- Allow the brownies to cool completely. Once cool, add the chocolate chips to a bowl.
- Then, add the heavy cream and 1/3 cup pumpkin nog to a small pot. Heat over medium heat just until it reaches a boil.
- Pour over the chocolate chips and allow to sit 3-5 minutes. Then, stir until smooth.
- Spread the mixture over the top of the brownies and allow the ganache to set completely at room temperature or in the fridge.
- Then, cut into squares and serve.
These brownies aren't for the kids! They're a boozy and delicious treat for the holidays! If you don't want to make them boozy, use an alcohol-free pumpkin nog or eggnog instead.
