Since being more mindful about what I eat after the holidays, I decided to reactivate my Hungryroot subscription. When my first delivery arrived last week, there was one meal I couldn’t wait to make again - this butternut squash ravioli in a creamy sauce with sausage and Brussels sprouts.
This is a recipe I made often when I was previously receiving Hungryroot deliveries. It’s comforting, yet comes together quickly with ready-to-cook ingredients. The dish starts with dairy-free butternut squash ravioli filled with sweet squash and almond milk ricotta. It’s tossed in Hungryroot’s Cashew Parm sauce, then finished with browned Italian sausage and shaved Brussels sprouts for a hearty, well-balanced meal.
With minimal ingredients, this pasta dish is perfectly balanced for late winter eating. The sweetness of the butternut squash ravioli pairs deliciously with the savory Italian sausage. The shaved Brussels sprouts offer freshness and a slight crunch while the creamy cashew sauce creates a comfy warmth. The whole dish comes together to create an easy, nourishing pasta meal.
Butternut Squash Ravioli with Sausage and Shaved Brussels Sprouts
This recipe is made in a single pot, making it simple to put together and easy to clean up. First, we brown the sausage. Then, we cook the ravioli. Once the ravioli's cooked, we add the sausage back into the pot along with the creamy cashew sauce and shaved Brussels sprouts. It's a low-effort meal that still feels wholesome, balanced, and hits the spot when you're craving a cozy dish.
To get this easy dish started, first we're going to cook some sausage. I removed the casing from a couple sausage links and cooked the sausage in a pot over medium-low heat. While the sausage cooked, I crumbled it. Once cooked, I removed the sausage and wiped out the pot.
Next, I filled the pot with salted water and brought it to a boil. I carefully added the ravioli and cooked it about 5 minutes, or until the ravioli floated to the top of the water. Then, I drained the ravioli.
With the cooked ravioli in the pot, I added the Cashew Parm sauce and gently tossed the ravioli in it to coat. I added a little water to thin out the sauce a bit.
Then, I added the sausage and Brussels sprouts into the pot, seasoned everything with salt and pepper, and gently stirred everything together to combine.
Once everything was completely warmed through, I served the ravioli. It makes about two servings.

Butternut Squash Ravioli with Sausage and Shaved Brussels Sprouts
Equipment
- 1 medium pot
Ingredients
- 2 sweet Italian sausage links
- 1 - 9 oz. package Kite Hill Butternut Squash Ravioli
- 1 - 8 oz. container Hungryroot Cashew Parm sauce
- Water if needed
- 2 cups shaved Brussels sprouts
- Salt and pepper to taste
Instructions
- Heat a medium pot over medium-low heat. Remove casings from the sausage and add to the pot.
- Cook sausage about 10 minutes, crumbling while cooking, until cooked through. Remove sausage from pot and set aside.
- Wipe out pot. Add salted water and bring to a boil. Cook ravioli about 5 minutes, or until pasta floats to the surface and is tender. Drain ravioli.
- Add Cashew Parm sauce to the pot. Gently stir to coat. If sauce is too thick, add a little bit of water at a time to thin it out.
- Add the sausage back into the pot along with the Brussels sprouts. Season with salt and pepper and gently stir to combine.
- Heat about 5 minutes more, until sauce is completely warmed through. Then, divide between two plates and serve immediately.
