Cheeseburger Salad with Pretzel Croutons

This Cheeseburger Salad is full of classic burger flavor! It's made with ground meat, lettuce, tomato, onion, pickles, crushed garlic pretzels, and a tangy mustard vinaigrette.

I was on such a salad kick before Christmas.  Then, well, it all went kind of south.  But now that all of the holiday treats have made their way out of the house (mostly by way of our bellies), I'm making better choices when it comes to what I eat.  And that means, I'm bringing back the salads!

While I realize that to some people, salad might seem boring, I find that one of the easiest ways to become a "salad person" is by getting creative with your salad combinations.

If you have leftover ground beef or ground turkey, throw it in a salad!  That's just what I did to create this cheeseburger inspired salad.  I added ground turkey to a bed of lettuce greens, along with tomatoes, onions, shredded cheddar cheese, pickles, and crushed Garlic OMG! Pretzels in place of croutons (kind of like a pretzel bun).

Cheeseburger Salad with Pretzel Croutons

This salad is kind of like a deconstructed cheeseburger.  All of the flavors are there!  It's even finished with a mustard vinaigrette to really pull the whole thing together!  And whether you're using last night's leftovers or starting from scratch, this tasty salad is super easy to make!

The first thing we need to do is cook our turkey.  If you're using leftover ground meat, skip head.  Otherwise, heat a skillet over medium heat and add the turkey to the pan.  Cook until browned completely through.  Drain and set aside.

Next, we can start putting our salad together.  Add the chopped lettuce to a large salad bowl.  Then, add the ground turkey, onion, tomatoes, shredded cheddar, pickles, and crushed garlic pretzels.

Now, we're going to add all of the dressing ingredients to a small mason jar.  Screw the lid onto the jar and give the jar a good shake.

Pour the dressing onto the salad and serve.

Ingredients
  

For the salad:

  • 1/2 pound ground turkey
  • 1 bunch Romaine lettuce cleaned and chopped
  • 1/4 cup red onion sliced thin
  • 1/2 cup grape tomatoes halved
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup pickle chips halved
  • 1/2 cup Garlic OMG! Pretzels crushed

For the dressing:

  • 1/4 cup olive oil
  • 1 tbsp. Dijon or yellow mustard
  • 1 1/2 tbsps. red wine vinegar
  • 1 tsp. pickle juice
  • Salt and pepper to taste

Instructions
 

For the salad:

  • Heat a skillet over medium heat. Add the ground turkey and cook 10-12 minutes, or until browned and cooked completely through. Drain and set aside.
  • Add lettuce to a large salad bowl. Add the ground turkey, onion, tomatoes, cheese, pickle chips, and crushed pretzels on top.
  • Prepare the dressing.

For the dressing:

  • Add all of the ingredients to a small mason jar.
  • Screw on the lid and give the jar a shake to combine.
  • Pour the dressing onto the salad and serve.
