A few weeks ago, my husband suggested having bratwurst sandwiches for dinner. It wasn't my first choice for a meal, but I went with it. I ended up ditching the sandwich roll in favor of a simple skillet meal made with sliced bratwurst, arugula, and sweet potatoes. It was so good that I made it again the next day. I couldn't wait to try the meal again with chicken sausage.

Fast forward to this week. I’m in post-holiday detox mode after a little too much indulgence. I’ve been focusing on meals with better-for-you ingredients - not exactly dieting, but loading up on more veggies. So I revisited this skillet dish using Italian-seasoned chicken sausage, onion, sweet potato, and arugula. I finished the skillet with a drizzle of balsamic glaze for extra flavor.

This easy skillet meal is flavorful, nourishing, satisfying, and comes together quickly. Since it's a one-pan meal, it doesn't take a lot of effort to make. The sweet potatoes and onions are cooked until tender and tossed with savory chicken sausage. The fresh arugula is added at the end - just until it starts to wilt. A drizzle of balsamic vinegar tops it off, and I'd even suggest adding a little shredded or shaved Parmesan, as well.

This recipe can easily be turned into a vegan/vegetarian dish by swapping out the chicken sausage for a plant-based sausage. And if you're not a fan of peppery arugula, try using baby spinach or kale instead. You could also play around with seasonings. Fresh herbs like basil or thyme would make a nice addition.

We're going to start this skillet dish by heating a tablespoon of olive oil in a large skillet. Peel and cube sweet potatoes and add them to the skillet, cooking about 10 minutes. The potatoes should be fork tender and slightly browned.

Add the onion, garlic, and chicken sausage to the skillet and stir to combine.

Once the onion has softened and the sausage is heated through, take the skillet off the heat and stir in the arugula just until it wilts.

Finish the skillet with a drizzle of balsamic vinegar and a sprinkle of shredded, or shaved, Parmesan on top. Then, serve.

Ingredients
  

  • 2 tbsps. olive oil divided
  • 2 medium sweet potatoes peeled and diced into small cubes
  • 3/4 cup yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1 - 10 oz. package Italian-seasoned chicken sausage sliced into rounds
  • 2 cups fresh arugula
  • Salt and pepper to taste
  • Balasmic glaze for drizzling
  • Optional: shredded or shaved Parmesan cheese

Instructions
 

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sweet potatoes. Season with salt and pepper and cook about 10 minutes, stirring occasionally, until potatoes are fork tender and slightly browned.
  • Add the other tablespoon of olive oil. Add onion, garlic, and chicken sausage and stir to combine.
  • Cook about 10 minutes, stirring occasionally, until onions have softened and sausage is heated through.
  • Turn off heat and add arugula. Stir in the arugula just until it wilts.
  • Right before serving, drizzle balsamic glaze over the skillet. If desired, sprinkle shredded, or shaved, Parmesan cheese on top.
