Easy Italian Sausage Gumbo

The holiday celebrations have ended and, I don't know about you, but I'm experiencing what can only be described as a holiday hangover.  Not so much a party-induced hangover, but the aftermath of preparations, gatherings, and post-holiday cleanup.  I think we all deserve a break on top of our holiday break!

So while I've been trying to shift back into an everyday routine that doesn't include baking cookies and wrapping presents, I've been taking full advantage of my Hungryroot deliveries.

I recently got a craving for a chunky style soup.  Something hearty and filling that would also warm me up!  Since my husband isn't a big soup or stew guy, I wanted to make a small batch of something that I could have for lunch during the week.

I've been wanting to make a gumbo since it's kind of a soup, but also kind of like a stew.  I went a bit non-traditional and decided to put an Italian spin on this Creole dish.

This gumbo is made with Italian sausage, a tomato and broth base, and mix of colorful veggies - all delivered to me from Hungryroot!

Easy Italian Sausage Gumbo

If you're looking for a cozy and comforting dish that doesn't take much prep and is ready in just about 30 minutes, you might like this Easy Italian Sausage Gumbo recipe.  Most of the ingredients are already prepped for cooking.  You'll have a hearty and delicious Italian style gumbo in no time!

First, we need to cook our sausage.  Add 1 tbsp. olive oil to a large pot and heat over medium-high heat.  Add the sausage and 1/4 cup water and bring to a simmer.  Cover the pot and cook for about 6 minutes until the sausages are browned on the bottom.

Flip the sausages and cook for another 5-6 minutes or until the sausages are browned on both sides and cooked through.  Remove from the pot and set aside.  Once the sausages have cooled down a bit, slice them into rounds.

Add 1 tbsp. olive oil to the same pot and heat over medium.  Add the garlic, mirepoix mix, zucchini, and red bell pepper.  Cook until the veggies have softened, about 4 minutes.

Add the sausage back to the pot.  Then, add 2 cups water, the chicken broth packet, and marinara.  Season with salt and pepper and stir.  Bring the pot to a simmer, cover, and cook.

While the gumbo is simmering, warm up the package of rice.  Once heated, divide between two bowls.

Then, spoon the gumbo over the bowls of rice and serve.  If desired, garnish with fresh Italian herbs like oregano, rosemary, or basil.

Ingredients
  

  • 2 tbsps. olive oil
  • 2 Sweet Italian Pork Sausage links
  • 2 1/4 cups water
  • 1 clove garlic minced
  • 1 - 8 oz. container mirepoix mix
  • 1 zucchini peeled and diced
  • 1 red bell pepper diced
  • 1 single-serve packet Instant Chicken Bone Broth
  • 12 oz. container Tomato Marinara
  • Salt and pepper to taste
  • 1 package Organic Seasoned Jasmine Rice

Instructions
 

  • Add 1 tbsp. olive oil to a large pot and heat over medium-high heat.
  • Add sausage and 1/4 cup water. Bring to a simmer. Cover and cook until sausages are browned on the bottom.
  • Flip sausages and cook until browned on both sides and cooked through. Remove from pot and set aside.
  • Once the sausages are cool to the touch, slice into rounds.
  • Add 1 tbsp. olive oil to the same pot and heat over medium.
  • Add the garlic, mirepoix mix, zucchini, and red bell pepper. Cook until the veggies have softened.
  • Add sausage back to pot. Add 2 cups water, broth packet, and marinara. Season with salt and pepper and stir. Bring pot to a simmer, cover, and cook.
  • While the gumbo is simmering, heat the package of rice according to the instructions. Then, divide the rice between two bowls.
  • Spoon the gumbo over the bowls of rice and serve. If desired, garnish with fresh Italian herbs like oregano, rosemary, or basil.

If you don't feel like making rice with this dish, you could also serve this gumbo with crusty Italian bread instead! Add some nice Parmesan on top of the gumbo and use the bread for dunking!  Yum!
