Just upon entering college, I decided to become a vegetarian. I believe I based my decision upon an unappetizing encounter with a hamburger. It was a "that's it! I'm done!" kind of moment that had me swearing off eating meat. At least for two years. Since I was so used to eating meat, I had to get creative with my meals to continue getting the protein and nourishment I needed.
I became a big fan of MorningStar Farms products during that time. I've tried plenty of their products and was repeatedly shopping for their Grillers Original and Chik'n patties to keep on hand. Even though I'm back to a carnivorous diet, I still enjoy these convenient, veggie options every once in a while. Especially during the summer when I tend to eat lighter meals.
So while I was at Target last week (surprise, surprise), I stopped in the freezer section to pick up my MorningStar Farms favorites. I grabbed the Original Chik'n patties and Grillers Original patties. I also purchased tomatoes, fresh mozzarella, and ciabatta rolls to make a Caprese style chicken sandwich - a perfect summertime, meatless lunch!
Morningstar Farms Chik'n Caprese Sandwich
This Caprese sandwich was simple to put together and combined some of my favorite summertime flavors! With a little fresh basil from the garden on top and a drizzle of balsamic glaze, this sandwich is fresh, flavorful, light enough for a summer meal, and totally satisfying!
To make this sandwich, I thawed a Chik'n patty in the microwave, then baked it for a few minutes in the toaster just to get some crunch to it. Then, I toasted a sliced ciabatta roll and put the sandwich all together.
First, I put down a layer of sliced tomatoes and some fresh basil leaves. Then, I added the Chik'n patty, fresh mozzarella, seasoned with salt and pepper, and added a nice drizzle of balsamic glaze on top.
MorningStar Farms Chik’n Caprese Sandwich
Ingredients
- 1 MorningStar Farms Chik'n patty
- 5-6 fresh mozzarella balls (ciliegine) sliced
- 1 small tomato sliced
- 1 ciabatta roll sliced
- 1 small handful of fresh basil
- Balsamic glaze
- Salt and pepper to taste
Instructions
- Prepare MorningStar Farms Chik'n patty according to package.
- Toast sliced ciabatta roll and set aside on plate.
- Place tomato slices and fresh basil onto roll. Follow with Chik'n patty.
- Top patty with fresh mozzarella, season with salt and pepper, and drizzle with balsamic glaze. Serve.
Of course, if meatless substitutes aren't for you, you can always make this sandwich with a frozen chicken patty or even a grilled chicken cutlet. Then, add Caprese style toppings on a toasted ciabatta roll and enjoy!
