A couple weeks ago, I shared a recipe for Orange Mint Vanilla Infused Sugar. And now, I'm going to give you a delicious way to use it! The first time I made this infused sugar, I packed it up in spice jars to give as gifts - and it does make a really great homemade gift. With what was left of that batch, I made sugar cookies. They were excellent! I mean, my husband and I dug into them right away! I immediately knew I had to add them to our holiday cookie list.
So I made an all new batch of the sugar and baked these infused sugar cookies to add to our holiday cookie trays. The infused sugar itself lends a slightly more complex flavor to your traditional sugar cookie. The orange peel and mint adds brightness and freshness. And for some warmth and coziness, there's also the addition of vanilla bean. Perfect for the holiday season!

Orange Mint Vanilla Infused Sugar Cookies

Let me show you how easy it is to make a batch of these sugar cookies! First, preheat the oven to 350 degrees. If desired, line two large baking sheets with parchment paper. I've baked these right on my stainless steel baking sheets and they've turned out great!
Now, we're going to mix the dry ingredients together. In a medium mixing bowl, mix the flour, baking soda, baking powder, and salt together. Set aside.
In a large mixing bowl, or stand mixer, cream the softened butter and infused sugar together. It should be kind of fluffy and fragrant. Add the egg and vanilla extract and beat until smooth and creamy.
Gradually mix the dry ingredients into the wet ingredients. Mix just until combined so the dough is soft, but not overly sticky.
Now, we're going to scoop about a tablespoon of the dough and roll it into a ball. At this point, I also rolled the dough balls in extra infused sugar. Place the dough balls about 2 inches apart on the baking sheets.
Bake for 10-12 minutes, or until the centers are set, but slightly soft and the edges are the slightest touch of golden brown.
Allow the cookies to cool completely before storing in cookie tins or adding to holiday dessert trays.

Orange Mint Vanilla Infused Sugar Cookies
Equipment
- 1 medium mixing bowl
- 1 large mixing bowl or stand mixer
- 2 large baking sheets
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup unsalted butter softened
- 1 1/4 cups Orange Mint Vanilla Infused Sugar
- 1 large egg
- 1 tsp. vanilla extract
- Optional: additional infused sugar for rolling
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- Add flour, baking soda, baking powder, and salt to a medium mixing bowl. Mix to combine and set aside.
- In a large mixing bowl, or stand mixer, cream the butter and infused sugar together, about 2-3 minutes, until light and fluffy.
- Beat in the egg and vanilla extract until smooth and creamy.
- Gradually mix the dry ingredients into the wet ingredients just until combined. The dough should be soft, but not too sticky.
- Scoop about 1 tablespoon portions of dough and roll into balls. If desired, roll the dough balls in extra infused sugar. Place 2 inches apart on the baking sheets.
- Bake 10-12 minutes, or until centers are set, but soft and just the slightest bit of golden brown around the edges.
- Let cookies cool 2-3 minutes on the baking sheet. Then, allow to fully cool (on wire racks or sheets of foil) before storing or gifting.
