These Peach Cobbler Nachos are made with homemade cinnamon sugar tortilla chips, a warm fresh peach topping, and a scoop of vanilla ice cream on top! It's a fun twist on a classic summertime dessert!

Another birthday's come and gone. I had a low key celebration - just the way I wanted it. I spent the day with some family. My original plan was to go peach picking, but the farm schedules were wonky and it was pretty hot out (such is late July). So instead, we hit up a farm store for their famous apple cider donuts, apple cider slushies, and fresh Jersey produce. Of course, I had to grab some fresh peaches while I was there!
Now that I have a bunch of peaches, I've been thinking about different ways to use them. Of course, nothing beats biting right into a juicy, ripened peach. But I also love a good peach ricotta bowl as a light lunch on a hot day or a Grilled Peach Caprese Salad as a delicious starter or side dish. And my most favorite summer dessert is definitely peach cobbler!
Nothing beats a real deal, homemade peach cobbler. But I have been known to put a twist on this classic peach dessert - like these Easy Upside Down Peach Cobbler Cups. So I decided to make some dessert nachos with a base of quick homemade cinnamon sugar tortilla chips, a sweet peach topping, and a scoop of vanilla bean ice cream on top!
Peach Cobbler Nachos
These dessert nachos are peachy perfection and fun to eat, too! They have that warm, cinnamon sugar flavor you'll find in classic peach cobbler with a juicy peach topping made on the stovetop. You could use whipped cream to finish off these nachos, but it's summertime! So I totally suggest going big with a scoop or two of vanilla ice cream (or even peach ice cream, if you can find it)!
To start these dessert nachos, we need to make our chips. Cut a couple flour tortillas into triangles. Then, brush with melted butter.
You could bake them in the oven or cook them in the air fryer (both are included in the recipe instructions below). I decided to air fry these, in batches, for about 6-8 minutes at 400 degrees. Then, toss them in cinnamon sugar.
With the chips done and set aside, start to work on the peach topping. Peel and slice a couple of fresh peaches. Then, add them to a small saucepan along with brown sugar, vanilla extract, cinnamon, a pinch of salt, plus cornstarch and water.
The mixture will thicken up and get bubbly. Once it reaches this state, take it off the heat, but keep it warm.
Now, we can start assembling the nachos. Place the cinnamon sugar tortilla chips on a serving dish. Spoon the peach mixture on top.
Then, add a nice scoop of vanilla ice cream on top. Or use whipped cream. Serve immediately.

Peach Cobbler Nachos
Ingredients
For the chips:
- 2-3 small flour tortillas cut into triangles
- 1 tbsp. butter melted
- 1 tbsp. sugar
- 1/2 tsp. ground cinnamon
For the peach topping:
- 1 large peach peeled and sliced
- 2 tbsps. light brown sugar
- 1/4 tsp. vanilla extract
- 1/8 tsp. ground cinnamon
- Pinch of salt
- 1 tsp. cornstarch
- 2-3 tbsps. water
- Vanilla ice cream, or whipped cream for topping
Instructions
For the chips:
- Preheat oven to 375 degrees.
- In a small bowl, mix the cinnamon and sugar together.
- Brush both sides of the cut tortillas with melted butter. Bake for 7-10 minutes, until golden brown and crispy. Or cook in an air fryer for 6-8 minutes at 400 degrees, shaking the basket halfway through cooking.
- Toss the warm chips in cinnamon sugar. Let chips cool.
For the peach topping:
- Add peaches, brown sugar, vanilla, cinnamon, and salt to a small saucepan. Stir to combine.
- In a small bowl, mix cornstarch and water until smooth. Stir into peach mixture.
- Cook for 5-7 minutes, over medium heat, until thickened. Add more water, as needed. Remove from heat and keep warm.
To assemble nachos:
- Place the tortilla chips on a serving dish. Spoon the peach mixture over the top.
- If desired, add a scoop of vanilla ice cream, or a dollop of whipped cream. Serve immediately.
