Even though Summer has just officially started, I have to say that it's been pretty good so far! I spent this entire past weekend at my parents' house hanging out in their backyard. I got to visit with my family and my little nieces. Hunter went swimming for the first time and even made a new friend! Sunday night, I made some very spontaneous plans with my cousin to go see Dolly Parton in concert (I'm still slightly in shock that we actually got to see her live).
Our plans for the rest of the week have been pretty casual aside from a few trips here and there to the store. I decided to make a fruit salad with some of the fruit and berries I had bought from the store and picked from our backyard. On hot Summer days, I love a nice, big bowl of fresh fruit! With the 4th of July weekend approaching, I decided to make this fruit salad a little patriotic with the addition of watermelon stars.
Originally, I wanted to use starfruit, but I didn't have much luck finding it. If you've never had starfruit before, it tastes similar to a green apple. It's so crisp and juicy. My mouth's watering just thinking about it! And it's naturally star shaped when sliced, making it perfect for patriotic 4th of July desserts.
Since I was sans a starfruit, I put one of my small star-shaped cookie cutters to good use and cut out some watermelon stars. As you know from last week's Maker's Mix-Up, I've been slightly obsessed with watermelon lately! This fruit salad was perfect to snack on while we all hung outside in the sun! I'm sure it'll be perfect for whatever 4th of July festivities you may be having or attending this weekend!
