Apple Spice Snack Cake

Fall is officially one week away and I'm already experimenting with seasonal baking. I rediscovered the pages inside of my An Apple A Day cookbook recently. Each page in this cookbook contains a different recipe featuring apples - one apple recipe per day in the year. There was a recipe for apple brownies that I couldn't wait to try!

I love a classic, homemade chocolate brownie. But this time of year gets me excited for baked apple treats and orchard visits.  While there's no chocolate in this recipe and they didn't quite turn out like brownies, this recipe made a moist, apple-filled snack cake.  I seriously can't get enough of this cake!

But I wanted to tweak the recipe a bit and make it my own. So I cut down on the butter, added brown sugar, and a little nutmeg, as well. I even sprinkled some turbinado sugar on top to give the top of the cake a little crunch to it. So worth it and I totally recommend adding the turbinado sugar! It gives the cake that bakery type of vibe.

Apple Spice Snack Cake

While this recipe is considered a snack cake, I've been enjoying it as a breakfast, too. A piece of this cake and your favorite fall flavored coffee is such a yummy way to start the day! Truthfully, this cake is quite enjoyable any time of the day! It's moist and flavorful with just the right amount of spice.

To start this cake, preheat the oven 350 degrees and grease a 9x9 inch baking pan. Then, cream the butter and sugars together. Beat the eggs in, one at a time, and stir in the vanilla.

Mix in the flour, baking soda, salt, cinnamon, and nutmeg. Fold in the apples.

Spread the cake batter into the baking pan and sprinkle turbinado sugar on top.

Bake the cake for 30-35 minutes, or until a toothpick comes out clean from the center of the cake. Allow the cake to cool before cutting.

Ingredients
  

  • 1/2 cup unsalted butter or 1 stick, room temperature
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 large eggs room temperature
  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • Pinch of salt
  • 1 tsp. cinnamon
  • Pinch of nutmeg
  • 2 apples peeled, cored, and chopped
  • Optional: turbinado sugar for topping

Instructions
 

  • Preheat oven to 350 degrees and grease a 9x9" baking pan.
  • Cream butter and sugars together until smooth.
  • Beat in the eggs, one egg at a time, and stir in vanilla.
  • Mix in the flour, baking soda, salt, cinnamon, and nutmeg. Fold in the apples.
  • Spread the cake batter evenly into the pan. Sprinkle turbinado sugar on top, if using.
  • Bake for 30-35 minutes, or until a toothpick comes out clean from the center of the cake.
  • Allow cake to cool before cutting into 12 pieces.

This cake so hits the spot when you're craving something apple or want a taste of fall-like flavors. Store the cooled cake in an airtight container at room temperature for about 3 days. It's also freezer-friendly. Wrap it in plastic wrap and store it in the freezer for about 7 days. Then, thaw and enjoy.
