These Baked Vegan Sausage Pizza Taquitos are a quick and easy pizza inspired snack! They're crispy, full of flavor, and made with plant based ingredients!

Our air fryer recently went kaput and I had to ditch a recipe idea for Super Bowl weekend. I couldn't figure out how to make it without an air fryer, so I put the idea on hold. The good news is that I ordered a new air fryer (because I apparently can't live without one now) and came up with a new recipe instead! Pizza taquitos!
I've previously mentioned that I'm cutting a lot of dairy out of my diet for health reasons. We still have our regular pizza night with good ol' mozzarella, but I've significantly cut out my dairy intake otherwise. Thankfully, there are plenty of substitutions out there to help me get my fix when I want something cheesy!
During my discovery of vegan cheeses, I've realized that they're not all created equal. I've tried a few different brands and found that Violife Vegan Mozzarella Shreds is my favorite mozzarella alternative. My picky husband's even eaten this cheese before with no complaints!
Since we're staying home and snacking this Super Bowl Sunday, I decided to make a couple vegan snacks that I can enjoy and might even get my husband to try! Because we love pizza so much and usually have a pizza style appetizer in our spread, I made 100 percent vegan pizza taquitos with vegan mozzarella shreds and plant based sausage from my Hungryroot box.
Baked Vegan Sausage Pizza Taquitos
These pizza taquitos are oven baked and even though they're vegan, they still have all of that Italian flavor you'd expect from a slice of pizza! Instead of plant based sausage, you could fill these with the plant based protein of your choice or simply load them up with veggies. Not into vegan food? Make these with shredded mozzarella, crumbled sausage, or diced up pepperoni instead!
The first thing I did was microwave the tortillas just so they'd become easier to work with. Then, I sprayed each side of the tortilla with cooking spray and spread some marinara sauce on top.
Next, I sprinkled the vegan mozzarella shreds and diced plant based sausage on top. I used Field Roast Plant Based Italian Sausage in my filling. The sausages are made with eggplant, peppers, and onion, which are already some of our favorite pizza toppings!
Now you want to carefully roll up each tortilla. You can use a toothpick to help them stay closed. Place them seam side down onto a baking sheet and bake.
Once the taquitos are crispy and the cheese has melted, serve them up with a sprinkle of fresh basil on top and a side of marinara sauce for dipping!
Baked Vegan Sausage Pizza Taquitos
Ingredients
- 8 white flour tortillas
- 1/2 cup marinara or pizza sauce plus more for dipping
- 2 1/2 cups shredded vegan mozzarella cheese
- 2 Field Roast Plant Based Italian Sausage Links diced
- Optional: 1 tbsp. fresh chopped basil vegan Parmesan
Instructions
- Preheat oven to 400 degrees.
- Place the tortillas on a microwave safe plate and heat for 30 seconds.
- Working one at a time, spray each side of the tortilla with cooking spray. Spread a tablespoon of sauce onto tortilla.
- Sprinkle with cheese and add some diced plant based sausage on top.
- Carefully roll up the tortilla and secure with a toothpick, if desired.
- Place on a baking sheet and bake for 18-20 minutes, or until golden brown and crispy and the cheese is melted.
- Allow the taquitos to cool for about 5 minutes before serving.
- Serve with fresh chopped basil, vegan Parmesan, and extra marinara sauce for dipping.
These taquitos pack so much pizza flavor that if you didn't tell anyone they were vegan, they would never know! If you end up with any leftover taquitos, you can pop them in a freezer bag once they're completely cooled. Then, thaw them out and reheat in the microwave or toaster oven.
