There are so many things to love about Thanksgiving. One of my favorite things comes after the holiday feast - the leftovers! I am all about taking full advantage of those delicious Thanksgiving leftovers. I have no problem eating them for days and days afterwards and turning them into all new dishes.
If you end up with leftover Brussels sprouts and butternut squash, I have just the thing to do with them! Toss them into a pasta salad! This pasta salad is like fall in a bowl! It's made with cheesy tortelloni, roasted butternut squash, shaved Brussels sprouts, onion, and dried cranberries with a maple balsamic vinaigrette.

So even if you're waiting on those Thanksgiving leftovers, you can still make an awesome, fall inspired meal without having to brave the crowds to shop for ingredients!
Butternut Squash Tortelloni Pasta Salad
The great thing about a pasta salad is that it usually doesn't take too long to make. Start this pasta salad by roasting the squash. While the squash is roasting you can prepare all of the other ingredients. Then, just add everything to a big mixing bowl, toss with a simple maple vinaigrette, and serve!
Let's preheat the oven to 400 degrees. Add the butternut squash to a baking sheet. Drizzle the squash with olive oil, season with salt and pepper, and toss. Roast the squash for about 20 minutes or until it's fork tender. Set aside.
While the squash is roasting, prepare the other ingredients. Fill a pot with salted water and bring to a boil. Add the tortelloni and cook for 2-3 minutes. Drain, rinse with cold water and set aside in a large mixing bowl.
Now, we can add the rest of the ingredients to the bowl. Add the Brussels sprouts, onion, dried cranberries, and roasted butternut squash to the bowl of tortelloni. Stir to combine.
All that's left to do is make the dressing! In a small bowl, add the balsamic vinegar, maple syrup, Dijon mustard, and olive oil. Season with salt and pepper and pour over the pasta salad. Mix to combine.
If desired, garnish with pumpkin seeds and serve the salad immediately.
Butternut Squash Tortelloni Pasta Salad
Ingredients
For the pasta salad:
- 1 tbsp. olive oil
- 16 oz. butternut squash cubes
- 9 oz. cheese tortelloni
- 9 oz. shaved Brussels sprouts
- 1/3 cup red onion chopped
- Generous 1/4 cup dried cranberries
- Salt and pepper to taste
- Optional: pumpkin seeds
For the dressing:
- 1 tbsp. balsamic vinegar
- 1 tbsp. maple syrup
- 1/2 tbsp. Dijon mustard
- 1 tbsp. olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees.
- Spread the butternut squash cubes onto a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss the butternut squash with your hands.
- Roast the squash for about 20 minutes, or until fork tender. Remove from oven and set aside.
- Bring pot of salted water to a boil. Add tortelloni. Cook 2-3 minutes. Drain, rinse with cold water and set aside.
- Add shaved Brussels sprouts, red onion, dried cranberries, and butternut squash to pasta. Stir.
- In a small mixing bowl, add the dressing ingredients and stir to combine. Pour over the pasta salad and mix.
- Garnish with pumpkin seeds, if desired, and serve immediately.
Notes
