It's that time of year again when food starts to look a little different to me. All of a sudden olives look like eyeballs, spaghetti looks like a bowl of worms, and chicken fingers look like witch fingers. It's the only time of year that I don't mind creepy-crawly things on my plate - well, not exactly, but kinda-sorta.
While I was snacking on some peanut butter stuffed dates recently, I thought to myself, "these would make some great chocolate-covered bugs!" And with pretzel stick legs, I could turn them into gross, but absolutely delicious spiders!
I mean, what could be more fun for Halloween than biting into a chocolate-covered "spider" with a creamy peanut butter filling inside and little crunchy legs?!
I got the peanut butter stuffed dates and pretzel sticks in a Hungryroot delivery. The rest of my spiders were made with dark chocolate chips and candy eyes. If you have white round sprinkles, you can use them instead and draw the pupil with a black food coloring marker.
If peanut butter stuffed dates aren't available, you can always make them yourself. Split pitted dates open carefully with a knife. Then, stuff them with your favorite peanut butter or other nut butter.
Chocolate Covered Date Spiders
Before we get to the fun part of dipping and decorating our spiders, we need to put them together first. Grab the pretzels and carefully cut them in half. Then, gently push the pretzels into the date to create legs.
Now, we're going to melt the dark chocolate chips. I do this in a small pot over the stove. Keep the heat low and continuously stir until the chocolate is melted and smooth.
Make sure you have a surface prepped with wax paper or parchment paper. Then, insert a toothpick or short bamboo skewer into the date and carefully dip the spider into the chocolate.
Once the date and pretzels are completely covered, set it onto the wax paper. Place candy eyes onto the spider and allow the chocolate to set.
Serve the spiders immediately before they crawl away!
Chocolate Covered Date Spiders
Ingredients
- 6 peanut butter stuffed medjool dates
- 18 Whole Grain Sea Salt Pretzel Sticks broken in half
- 1 - 10 oz. bag dark chocolate chips
- 12 candy eyes or white sprinkles and black food coloring marker
Instructions
- To prepare the dates, gently press 6 pretzels into dates, using 3 on each side.
- Add dark chocolate chips to a small pot. Heat chocolate over low, stirring continuously until melted.
- If desired, press a toothpick or short bamboo skewer into the date. Then, carefully dip the date into the melted chocolate.
- Place chocolate covered date onto wax paper. While chocolate is still melted, press candy eyes onto date.
- Allow the chocolate to set completely. Then, serve.
This is such a fun Halloween treat that's so easy to make! The combination of dark chocolate, peanut butter, and medjool dates is so tasty, too! Add in the salty sweetness of chocolate covered pretzels and you've got a delicious spooky snack!
