I started infusing water years ago when I first planted my herb garden.  I invested in an infusion pitcher and used fresh fruit and herbs to flavor my water concoctions.  Since I only seem to get my daily intake of water when it's flavored, water infusions are a simple (and tasty) way to keep me hydrated.  Plus, they're another great way for me to use up our garden treasures.

We planted cucumbers in our garden for the first time this year and they've really taken off!  I've been using them in salads and canning pickles for weeks now.  But then, I remembered that cucumber water is extremely hydrating and refreshing.  Add some citrus and mint and you have a refreshing and cool beverage for summer sipping!

Cucumbers are 96% water giving them the highest water content of any food - even watermelon!  Just snacking on a cucumber alone is a great way to keep you hydrated.  But add a little lemon and some cooling mint, and you've got yourself a water infusion that will keep you feeling refreshed on a hot day.

Refreshing Cucumber, Lemon, and Mint Water

Making this water infusion is as simple as slicing some cucumber, lemon, and mint and placing it in a jar or container with water in the fridge.  Let the infusion sit for 24 hours and the next day you'll have a delicious beverage to sip and enjoy!

To start this water infusion, we need to slice up our fresh ingredients.  Slice cucumber and lemon.  Then, remove the mint leaves from the stems.

Place all of the ingredients into a large pitcher or a mason jar (32 ounces is good).  Gently crush the ingredients to release the flavors.

Pour in the water and give it a good stir (or shake, if you're using a jar).  Then, place it in the fridge for 24 hours to get the best flavor infusion.

While this combination of flavors is totally refreshing, you can play around with other cucumber flavors like cucumber and watermelon, cucumber and ginger, cucumber and lime, and cucumber and basil.  It's really just fun to experiment with all of these fresh flavors!
