In the morning, before I start my work day, I like to go outside to enjoy a peaceful moment. It's still quiet and not too hot. So I spend time watering my plants, picking berries, checking on our veggies, and seeing how my herbs are doing.
This time of year, our tomatoes are starting to turn red one after the other. Our cucumbers are growing at a steady rate and my herbs - well, they're basically unstoppable!
We've been eating a ton of salads lately to keep up with our garden. Not such a bad thing when it's hot outside and you want something light to eat. So I recently decided to use some of our fresh cherry tomatoes, cucumbers, red onion, and herbs (I used green and purple basil and oregano) to make a simple, summer side salad.
Fresh Tomato, Cucumber, and Herb Salad
I love that I get to shop for my salads right in my backyard. Chances are, you're growing your own vegetable garden, or you know someone who is. Even if you can't get your hands on garden veggies, this is a budget-friendly side salad made almost entirely with seasonal ingredients.
And all you really have to do to make this salad is slice everything up and put it in a bowl. Then, sprinkle goat or feta cheese on top, season with salt and pepper, and serve with a drizzle of olive oil.
Fresh Tomato, Cucumber, and Herb Salad
Ingredients
- 3-4 cups cherry tomatoes halved
- 2-3 mini cucumbers or 1 medium, sliced
- 1/4 cup red onion sliced
- Crumbled goat or feta cheese
- Small handful of fresh herbs such as basil oregano, parsley, or rosemary, chopped
- Salt and pepper to taste
- Olive oil to drizzle
Instructions
- Add tomato, cucumber, and onion in a medium bowl.
- Add a small handful of chopped fresh herbs in salad and combine.
- Sprinkle salad with crumbled goat or feta cheese.
- Season with salt and pepper and drizzled with olive oil.
- Gently toss and serve immediately.
If you're not a fan of goat or feta cheese, you can use fresh mozzarella (I like bite-sized ciliegine) in this salad. And if you want to dress it up a little more, add a splash of red or balsamic vinegar. A squeeze of lemon juice is nice, too.
