I'll admit that I'm usually lost when it comes to making lunch for myself.  If there aren't leftovers from the night before, I find myself searching for something quick and fulfilling to eat (and not from a take out menu).

We are weekend sandwich eaters and sometimes those lunch meats and cheeses travel into the next week.  My husband will occasionally take a sandwich for work and I don't find myself reaching for sandwiches after the weekend.  Packages from the deli counter often just sit in the fridge untouched. Sad.

Last week I found myself actually craving a sandwich for lunch.  So I stopped at the store to pick up some lunch meat and cheese.  On the back of the cheese package was a recipe for sandwich roll ups.  They were filling, fun to eat, and a totally different take on your average sandwich!

Ham and Cheese Sandwich Roll Ups

Personally, I love finger food because it's fun to eat!  More fun than cutting sandwiches into shapes a la Mermaids or fancying them up with gourmet mayonnaise!  The great thing about these Ham and Cheese Sandwich Roll Ups is that they're fun finger food for kids of all ages!

The first thing we need to do is cut the crusts off our slices of bread.  Then, flatten them out with a rolling pin.

Now we're going to spread each slice of bread with Dijon mustard and sprinkle on a little Italian seasoning.  Then, layer on the ham and cheese.

Roll up the layered pieces of bread and secure them with a toothpick.  Don't worry!  We'll remove them before serving.  Then, we're going to spread mayo onto the roll ups.

Heat a non-stick skillet over medium heat and place the roll ups into the pan.  Cook on each side until they're golden brown and toasty and the cheese has melted.  Remove them from the skillet and take out the toothpicks.

Serve the roll ups warm with a bowl of tomato soup for dipping.
