Healthy Apple Donut Rings

These Healthy Apple Donut Rings might not actually be donuts, but they sure look like it! They're a fun and wholesome snack that can be customized with a variety of fruit and yogurt flavors!

Ah, the Olympics!  This is the last week of the Winter Games and they've been so much fun to watch!  I'm so excited for our Team USA athletes who have medaled in their sports.  The talent that I've seen is beyond amazing because some of those sports are crazy!  If I had the time, I'd probably sit and binge watch the Olympics all day long because I find the games so interesting and exciting!  I've been catching up at night and watching with a small snack while I live-tweet the games.

My favorite events to watch have definitely been the luge, figure skating, and curling.  But I've found a whole new interest in ski jumping (because again, crazy!) and the biathalon.  Like I said to my husband, I don't really get why you would need to combine skiing and shooting unless you were in the wild, but it's an intriguing event nonetheless.  With so much going on at one time, the focus those athletes have to hit their target is pretty amazing!

Leading up to the Olympics, I shared some sweet, Olympic-themed candy treats to enjoy while watching the games. I really wanted to make donut Olympic Rings, too, but my husband and I are trying to stick to healthier snacks these days.  Despite my love for a good, cakey donut, I remembered making apple "donuts" with my niece last year.  We cored and sliced an apple to make rings.  Then, we topped them with peanut butter and added some sprinkles on top.  They were such a fun snack that was quick and easy to make!

I was telling my husband about my Olympic snack idea.  He asked me, "So are you going to top them with an apple cider glaze or something?"  No, boo.  Sorry.  It's not that kind of apple donut (although apple cider glaze would be pretty YUM and I should try that eventually).  We live within walking distance to a grocery store, so I took a walk with my husband to gather ingredients to make this healthy apple and yogurt snack.  We had fun picking out different types of fruit together to represent each color of the Olympic rings!

Here are some possible apple donut toppings we came up with to represent the five colors in the Olympic rings:

Blue - blueberries
Yellow - pineapple, mango, peaches, bananas
Black - chia seeds, blackberries, mini chocolate chips, chocolate granola
Green - kiwi, sliced green grapes, honeydew melon
Red - strawberries, raspberries, pomegranate seeds

We used blueberries, pineapple chunks, blackberries, kiwi, and strawberries.  I cored an apple using my trusty apple corer and cut it into slices.  I didn't make the slices too thin.  You want them to be easy to pick up and hold onto while eating.  Then, I spread on Greek yogurt.  It's a thick enough base to keep your toppings in place.  Then, I decorated my apple donuts with all of that gorgeous fruit!


Healthy Apple Donut Olympic Rings

Ingredients
  

  • 5 apple slices
  • Plain or vanilla Greek yogurt
  • Blueberries
  • Blackberries
  • Strawberries sliced
  • Pineapple chunks sliced
  • Kiwi sliced
  • Optional: lemon water juice of 1 lemon mixed into a bowl of water

Instructions
 

  • Use an apple corer to core an apple. Then, slice it up.
  • If you're not topping the apples immediately, soak slices in lemon water to keep them from turning brown. Pat slices dry before topping.
  • Spread a little Greek yogurt evenly onto each apple slice.
  • Then, top the apple slices with each different fruit and serve.

Notes

Tip: check out the pre-sliced fruit in your local grocery store. It ended up being cheaper to buy a combination of pre-sliced fruit than to buy each individual container!
