One Pan Jerk Chicken

It's getting nicer outside and the last thing that I want to do is spend a lot of time inside.  The days are longer and I would rather be outdoors than inside cooking these days.  Lately, I've been doing a lot of - what I like to call - lazy cooking.  The easier, the better.  I'm all about "set it and forget it" mode.  I make a lot of crock pot recipes or throw a protein on my indoor grill and a side in the oven. But I realized that I could make everything on one pan and be done!

I've seen a lot of one pan meals circulating across social media.  Most one pan meals that I've seen consist of a lean protein and lots of colorful veggies. We eat with our eyes first, so these meals are all around satisfying.  I recently made my first one pan meal.  Can you believe I've been cooking with multiple dishes up until now?  Making a meal on one baking sheet was so easy and so tasty, too!

I like cooking.  I find it relaxing.  It's why my blog is mainly food focused, after all.  But some nights, I just don't have it in me.  That's why I'm thankful to have One Pan & Done now in my arsenal of cookbooks.  Upon receiving this book, I flagged so many recipes!  The first recipe that I couldn't wait to make was this jerk chicken dish.  It was so quick and easy to make, and the perfect mix of sweet and savory flavors.

One Pan Jerk Chicken

This One Pan Jerk Chicken is a flavorful, wholesome meal without a lot of prep work or cooking. Cook it all on one pan and be done with dinner!

Ingredients
  

  • 1 tbsp. dried thyme
  • 2 tsp. sugar
  • 1 tsp. allspice
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. black pepper
  • 2 bell peppers cut into strips
  • 1/2 fresh pineapple cubed
  • 1/2 onion cut into chunks
  • 3 tbsp. olive oil
  • 4 boneless skinless chicken breasts

Instructions
 

  • Preheat oven to broil. Line a baking sheet with foil and non-stick cooking spray.
  • In a small bowl, mix together the thyme, sugar, allspice, garlic powder, salt, cayenne, and pepper.
  • Toss the bell peppers, pineapple, and onion with olive oil. Spread them out on the baking sheet.
  • Rub each side of the chicken with the jerk seasoning. Place the chicken among the veggies.
  • Place the baking sheet in the oven for about 10-12 minutes. Flip the chicken halfway through cooking.
  • Remove pan from oven once chicken is cooked through and veggies are slightly charred.
  • Serve chicken and veggies hot from the oven with a side of rice, if desired.

The next time that I make this dish, I might add a little more cayenne to it.  I might even add some fresh hot peppers to the mix of bell peppers.  It didn't have as much of a kick as I wanted it to, but it was still pretty flavorful.  The veggies and the pineapple, however, were perfect!  I loved the char on everything and how the sweetness of the pineapple balanced out the dish.

If you don't want to spend a lot of time cooking, but want a delicious, wholesome meal (and some helpful kitchen tips, as well), this is the cookbook for you.  There are plenty of one pan recipe ideas from breakfast to dessert.  I love that I can throw all of my ingredients on a pan, shut the oven door, and be done.
