Roasted Pumpkin Seed Trail Mix

I recently made a batch of homemade pumpkin puree and decided to save the seeds to roast. My initial plan was to roast the seeds to give to the birds outside. But then, I started snacking on them and decided to keep them for myself. Don't worry - the birds get plenty (including wild bird seed, homemade suet, and homegrown sunflower seeds). As I was snacking on the pumpkin seeds, I realized they would make a tasty addition to a trail mix.

I wanted to create a snack mix with a slightly autumnal theme. So along with the roasted pumpkin seeds, I added dried cranberries, pecan pieces, dried apples, dark chocolate chips, and a maple cinnamon granola I found at the grocery store. Simple and seasonal with just the right amount of harvest style flavor! Plus, it's helps me curb cravings for something sweet without overdoing it with the sugar - something that's so easy to do this time of year!

Now, I do have to note that my pumpkin seeds were unseasoned upon roasting since I thought they were going to be a treat for the birds. You can season and re-roast pumpkin seeds, as I ended up doing. You just need to make sure that the coating and seeds don't burn during the roasting process since they were already cooked once. Watch them carefully as they roast!

Roasted Pumpkin Seed Trail Mix

Once the seasoned pumpkin seeds cooled, I tossed all of the ingredients in a bowl, added to a jar, and immediately enjoyed my slightly addictive, fall style trail mix! This snack mix is such a fun and delicious way to put those pumpkin seeds to good use after carving your Halloween pumpkins!

The first step in making this mix is roasting the seeds. I added instructions on re-roasting the seeds with seasoning in the recipe below. But if you're starting from scratch, toss the pumpkin seeds with melted butter, pumpkin pie spice, a little apple cider, and salt.

Then, heat the oven to 300 degrees and spread the pumpkin sheets evenly onto a large baking sheet. Roast the seeds for about 20 minutes. They should look slightly golden brown.

Once the roasted pumpkin seeds have cooled, add them to a mixing bowl along with the dried cranberries, pecan pieces, dried apples, dark chocolate chips, and granola. Stir to combine.

Enjoy immediately or store in an airtight container kept in a cool, dark place for up to a month.

Ingredients
  

For the roasted pumpkin seeds:

  • 1 cup pumpkin seeds
  • 1 tbsp. melted butter
  • 1 tsp. apple cider or maple syrup
  • 1/2 tsp. pumpkin pie spice or cinnamon
  • 1/4 tsp. salt

For the trail mix:

  • 1/4 cup dried cranberries
  • 1/4 cup granola like maple or cinnamon
  • 1/3 cup dried apples cut or torn into pieces
  • 1/3 cup pecan pieces or walnut pieces
  • 1/3 cup dark chocolate chips or milk chocolate chips

Instructions
 

To roast the pumpkin seeds:

  • Preheat oven to 300º.
  • Toss pumpkin seeds with butter, apple cider, pumpkin pie spice and salt.
  • Spread evenly onto a large baking sheet and roast about 20 minutes.

For the trail mix:

  • Allow pumpkin seeds to cool. Then, add to a medium mixing bowl.
  • Add the dried cranberries, granola, dried apples, pecans, and dark chocolate chips to the bowl. Stir to combine.
  • Store in an airtight container in a cool, dark place up to a month.

Notes

To season pre-roasted pumpkin seeds:
  1. Preheat oven to 275º.
  2. Toss seeds with melted butter, apple cider, pumpkin pie spice, and salt.
  3. Spread evenly onto a large baking sheet and bake about 8 minutes.
  4. Watch seeds carefully so they don't burn.
  5. Then, remove from oven and allow to cool completely.

I've never thought to make a trail mix with roasted pumpkin seeds before this. But I'm definitely going to look forward to roasting pumpkin seeds every year from now on!
