When apple season returns, there's always one cookbook I break out for ideas and inspiration - An Apple a Day. This cookbook has been my go-to every single fall since I've had it. The book contains 365 recipes, one for every day of the year, in just about every food category you could think of. And the main ingredient of each recipe is, of course, apples!
So I, once again, dug this cookbook out of my collection for some apple recipe ideas. While flipping through the pages, I landed on a recipe for a rice salad and then another for rice stuffed baked apples. I took inspiration from each recipe and created a delicious and cozy apple dish.
This recipe is made with a wild rice base mixed with sweet Italian sausage, onions, garlic, apples, pecans, and herbs and spices. It's a little savory thanks to the sausage, onions, garlic, herbs, and seasonings. And there's a hint of sweetness and crunch thanks to the apples and pecans. It's the perfect combination of fall flavors!
Sausage and Apple Wild Rice
This dish would make an easy meal for a chilly fall night. It would even be delicious served as a side dish for Thanksgiving and the upcoming holiday season! It's a simple recipe to put together that's big on seasonal flavor!
To start this dish, we need to first cook the rice. Add a package of Ben's Original Long Grain & Wild Rice (with seasoning packet) and water to a pot and bring to a boil. Then, lower the heat, cover, and cook until rice is tender.
While the rice is cooking, prepare the sausage mixture. Add the sausage to a skillet and cook over medium heat. Once sausage is almost completely cooked through, add the garlic and onion to the pan and cook until fragrant. Then, lower the heat.
Stir in the wild rice, apple, pecans, and seasonings.
Serve warm.
Sausage and Apple Wild Rice
Ingredients
- 1 package Ben's Original Long Grain & Wild Rice
- 2 1/4 cups water
- 1/2 lb. sweet Italian sausage ground
- 2-3 cloves garlic minced
- 1/4 cup onion diced
- 1 large honey crisp apple cored and diced
- 1/4 cup pecans crushed
- 1/2 tsp. dried oregano
- 1/4 tsp. ground sage
- Salt and pepper to taste
Instructions
- Add package of wild rice and water to medium pot and cook according to package, about 20 minutes.
- While rice is cooking, add sausage to a large skillet and cook over medium heat.
- Once sausage is cooked through, 8-10 minutes, add garlic and onion. Cook 2-3 minutes, or until fragrant.
- Lower heat and stir in wild rice, apple, pecans, oregano, sage, salt, and pepper.
- Serve warm.
Apples and pork just go so well together. So while apple season may be full of sweet treats, consider using apples in savory dishes - such as this sausage and wild rice recipe - this season! It's such a cozy meal that tastes like fall in every bite.
