Spooky Spaghetti and Meatballs

What I really love about the Halloween season is the ability to take an average meal and put a spooky spin on it.  Like it's so easy to turn simple foods into eyeballs and add them to just about any meal!

As I was thinking about ways to create a simple, but creepy eyeball-filled dish, I thought about one of the easiest, most delicious comfort foods there is - spaghetti and meatballs!

For Halloween I'm turning classic spaghetti and meatballs into a ghastly but good dinner!  Spaghetti with marinara sauce becomes a bed of bloody pasta.  And flavorful beef meatballs become eyeballs with a little mozzarella cheese and a sliced olive on top!

While spaghetti and meatballs is a pretty easy dish to make already, it was made easier with ingredients from my Hungryroot delivery.  I was able to grab everything for this recipe except for the mozzarella cheese, which I already had on hand.

All I had to do to make this meal was boil the pasta.  Once cooked, I stirred in some marinara.  Then, I heated the meatballs and added a circle of mozzarella cheese on top, followed by a sliced olive.

Spooky Spaghetti and Meatballs

If you're looking for a quick dish to feed the family before heading out the door on Halloween night, this spooky spin on spaghetti and meatballs is easy and delicious! Serve it with garlic bread to help keep the vampires away!

The first step to starting this dish is making the pasta.  Boil a pot of salted water.  Then, add the spaghetti and cook according to package, or until al dente.  Drain and add back to the pot.

While the spaghetti is still warm, add half of the marinara sauce.  Season with salt and pepper and toss.  Pop a lid on top of the pot to keep everything warm.

Heat olive oil in a medium skillet and add the meatballs.  Cook until the meatballs are browned on all sides and warmed through, about 6-7 minutes.  Set aside.

Divide the spaghetti between plates and tuck a few meatballs into the spaghetti.  Then, add small circles of mozzarella and an olive slice on top to create the eyes.

Serve the spaghetti immediately with extra marinara sauce and garlic bread, if desired.

Ingredients
  

  • 1/2 - 16 oz. box Organic Whole Wheat Spaghetti
  • 1 - 12 oz. container Tomato Marinara
  • 1 tbsp. olive oil
  • 1 package Grass-Fed Beef Meatballs 12 meatballs
  • 2 slices mozzarella cheese cut into small circles
  • 6 Pitted Kalamata Olives halved
  • Salt and pepper to taste

Instructions
 

  • Bring a pot of salted water to a boil and cook the spaghetti according to package until al dente.
  • Drain the spaghetti and return it to the pot.
  • Toss with half of the marinara sauce, while warm, and season with salt and pepper. Cover and set aside.
  • In a medium skillet, heat olive oil. Add meatballs and cook, turning occasionally, until browned and warmed through.
  • Divide the spaghetti between plates and top with meatballs.
  • Before serving, add a circle of mozzarella cheese and a sliced olive on top to create the eyes.
  • Warm up the rest of the marinara sauce and serve alongside the spaghetti and meatballs.

Notes

Pro tip: to make easy mozzarella cheese circles, use the bottom of a pastry trip to cut circles out of the cheese.
