Skeleton Baked Brie En Croute

After receiving a few gift cards for Marshall's and Home Goods for my birthday, I shopped for a lot of Halloween stuff.  One of the things I bought was a Halloween brie baker with a skull lid.  The tag showed a Jack O' Brie idea with a jack-o'-lantern face cut out of a brie wheel.  But I wanted to try making a skeleton inspired baked brie to match the brie baker.

Not only did I want to try making a skeleton face in a brie wheel, I wanted to make brie en croute - mainly a Halloween skeleton brie en croute made with puff pastry wrapped brie and jam.  But what kind of jam would I use?

I toyed with the idea of something red and kind of "bloody," if you will.  Then, I thought about skeletons.  They're not really bloody.  Their faces are just black and hollow inside.  So I'd need something a little bit darker.

Blackberry jam.

So this brie en croute is made with seedless blackberry jam and wrapped in puff pastry cut to look like a skull face.  The brie is creamy and the blackberry jam adds a touch of sweetness while the puff pastry adds a subtle crispy and buttery touch.

Skeleton Baked Brie En Croute

Make this Halloween inspired brie en croute with just a few simple ingredients.  If you don't have a brie baker, you can set the brie wheel into a small baking dish (just slightly larger than the brie) or on a baking sheet lined with parchment paper.

Let's get started by preheating the oven to 350 degrees and spraying our brie baker, if using one, with non-stick cooking spray.  Then, unroll the puff pastry onto a lightly floured surface.  Roll it out so it completely covers the brie wheel.

Now we're going to place the brie into the center of the puff pastry and lightly mark where it's sitting (I did this with the brie baker lid) so we know where to cut our skeleton face.  Using a paring knife, cut out a simple skeleton face inside the marked circle.

Take the brie and spread the blackberry jam on top of it.  Then, wrap the puff pastry around the brie, making sure that the skeleton face cut out is sitting on top of the jam.  Cut off any excess puff pastry dough from the bottom.

Once the brie is all tucked into the puff pastry, brush the entire thing with egg wash.  Then, place it into the brie baker.

Bake the brie en croute for 20-25 minutes, or until the brie is completely melted through and the puff pastry just starts to turn golden brown.  Serve the brie immediately with your favorite crackers.

Ingredients
  

  • 1 puff pastry sheet
  • 1 - 8 oz. brie wheel
  • 3 tbsp. seedless blackberry jam
  • 1 egg beaten + 1 tsp. water, combined
  • Crackers for serving

Instructions
 

  • Preheat oven to 350 degrees and spray the brie baker with non-stick cooking spray.
  • Unroll sheet of puffed pastry onto lightly floured surface.  Use rolling pin to roll it large enough to wrap brie in.
  • Add the brie to the center of the dough and gently trace around the brie to mark where it will sit.
  • Using a paring knife, cut a skeleton face inside the marked circle of puffed pastry.
  • Spread the blackberry jam on one side of the brie.  Then, wrap the puffed pastry around the brie, with the cut portion set on top of the jam.
  • Cover the puff pastry with egg wash and place inside the brie baker.
  • Bake for 15-20 minutes, or until the pastry is golden brown and the brie is melted through. 
  • Serve brie immediately with crackers.

If you're not comfortable freehanding a skeleton face onto the puff pastry, you can use a skull or skull and crossbones cookie cutter to create a Halloween design on top of your brie en croute.  Or you could even do an image search and use a printout to trace a shape onto the pastry. Have fun with it!  It's Halloween after all!
