Thanksgiving Leftovers Monkey Bread

One of my favorite things about Thanksgiving - besides gathering with family and reflecting on what we're grateful for - is the leftovers!  It was just two of us this year versus a 20 pound beast of a turkey!  We shared some of the leftovers with my in-laws.  But I couldn't wait to portion out and pack our freezer with leftover turkey!

I've made so many plans for our leftover turkey.  One thing I hadn't planned on making - but I'm so glad that I did - was this monkey bread!  I originally bought all of the ingredients to make a breakfast-style monkey bread.  But that recipe fell through when I realized I was low on the seasonings I needed.

I didn't want my ingredients to go to waste.  So I turned some of our Thanksgiving leftovers into a semi-sweet and savory monkey bread served with a side of leftover gravy for dipping!

If you're like me and could eat Thanksgiving dinner almost every single day, you're going to love this monkey bread recipe!  Consider it Thanksgiving dinner all wrapped up inside a warm, buttery roll!

Half of the monkey bread is filled with a combination of whole berry cranberry sauce (or use leftover jellied cranberry sauce) and cream cheese.  The other half of the monkey bread is filled with turkey and stuffing.

Thanksgiving Leftovers Monkey Bread

Grab two cans of crescent rolls or crescent roll dough.  Pop open the cans and roll out the dough so it's in one, big sheet.  Then, use a pizza cutter to cut 16 squares in the dough.

You're going to need about 1/2 cup of each filling.  Spoon a little cream cheese onto half of the dough.  Then, top with cranberry sauce.  On the other half of the dough, spoon some stuffing and top with chopped turkey.

Once all the dough is filled, take the corners and fold them into the center. Pinch to make sure that they're all closed up. Then, place them in a generously greased bundt pan, alternating between fillings.  Sprinkle fresh rosemary and fresh sage on top.  Give the dough a light brushing of melted butter and bake.

After about 30-35 minutes, you end up with a buttery, golden delicious monkey bread filled with some of your delicious Thanksgiving leftovers!

Thanksgiving Leftovers Monkey Bread

Ingredients
  

  • 2 - 8 oz. cans of crescent rolls or crescent roll dough
  • 1/2 cup whole berry cranberry sauce
  • 1/2 cup cream cheese softened
  • 1/2 cup cooked turkey chopped
  • 1/2 cup stuffing
  • 1 tbsp. butter melted
  • 1 tsp. fresh sage chopped
  • 1 tsp. fresh rosemary chopped
  • Leftover gravy for dipping

Instructions
 

  • Preheat oven to 375 degrees. Generously grease a bundt pan making sure to cover all sides.
  • Open the cans of crescent rolls and roll out into one big sheet. Then, use a pizza cutter to cut 16 squares.
  • Fill half of the squares with a spoonful of cream cheese and cranberry sauce.
  • Fill the other half of the squares with a spoonful of stuffing and turkey.
  • Take each corner of the dough and fold them into the middle, pinching dough closed, and forming a ball.
  • Place dough balls into prepared bundt pan, alternating between fillings.
  • Sprinkle chopped herbs on top and lightly brush dough with melted butter.
  • Bake the monkey bread for 30-35 minutes, or until dough is cooked through and golden brown. Allow bread to cool 10 minutes.
  • Carefully flip bundt pan over to remove bread. Use a plate to flip monkey bread once again.
  • Serve with a side of warmed up gravy for dipping.

By the way, if you're curious about how long your Thanksgiving leftovers will last.  They'll last about 3 or 4 days in the fridge.  But if you portion them out and put them in the freezer, they'll last 2-6 months!  If you're like me and love Thanksgiving dinner, you get to keep the celebration going!

If you're not planning on eating this monkey bread right away, you can also portion it out in freezer bags and freeze it!  Then, just let it thaw out a bit and warm up your serving in the microwave for 15-20 seconds!

This monkey bread recipe is such a fun way to use up some of your Thanksgiving leftovers.  Serve with a side of gravy to dip those turkey and stuffing bites!
