Pumpkin Spice Bacon Cinnamon Rolls

One of my favorite things about this time of year is the arrival of pumpkin spice everything in stores again. If it comes in an orange package this time of year, I'm likely to add it to my shopping cart. That's basically what happened when I came across the weirdest (but actually really yummy) pumpkin spice find I've tried so far - pumpkin spice bacon. Yup! It's totally a thing thanks to the Hatfield brand.

I wasn't sure what to expect when I first tried it, but I was pleasantly surprised. If you're into salty-sweet flavor combos, you'll probably really like this bacon. It doesn't have an overwhelming amount of pumpkin spice flavor. But it definitely gives the salty bacon a hint of fall-inspired sweetness. It's so good crisped up in a pan, but I wanted to try adding it to another one of my favorite pumpkin items - pumpkin cinnamon rolls.

When the first hint of pumpkin spice hits the shelves, I go searching for pumpkin spice cinnamon rolls. They're probably one of my top favorite pumpkin spice items. So when I tried the pumpkin spice bacon, I knew I had to create the ultimate breakfast mashup for fall! You might've seen bacon cinnamon rolls before. But I'm taking it up a notch with pumpkin spice bacon and pumpkin spice cinnamon rolls!

Pumpkin Spice Bacon Cinnamon Rolls

Not only am I rolling pumpkin spice bacon and pumpkin spice cinnamon rolls into one, delicious, sweet treat, but I'm also making them look like little pumpkins! Definitely pumpkin overload, but if you're like me, you'll love every single delicious, salty, sweet, and pumpkin spice infused bite! Plus, you'll appreciate their adorable pumpkin-inspired shape!

First, we need to cook our pumpkin spice bacon. You'll need to cook 10 strips of bacon since we're going to use two strips per cinnamon roll. Cook the bacon until it's crisp, but not overdone, about 10 minutes. You still want it to have some chew to it. Once the bacon is cooked, place on a paper towel to drain.

Next, separate and unroll each cinnamon roll. Place two strips of bacon onto each cinnamon roll and roll them back up.

Now, we're going to give the cinnamon rolls a pumpkin shape. To do this, wrap the cinnamon rolls with food grade twine. You don't want to wrap the twine too snugly. Just basically let it rest on the side of the cinnamon roll. Then, tie at the top to secure and place the cinnamon rolls onto a greased round baking pan.

Bake the cinnamon rolls for about 25 minutes at 350 degrees, or until cooked through and golden brown.

Once baked, snip the twine and remove it from each cinnamon roll. Spread the included icing onto each roll.

Then, add half of a cinnamon stick to the center of each cinnamon roll to create a pumpkin stem. Serve warm.

  • 1 large baking sheet
  • Food grade twine
  • Kitchen scissors

Ingredients
  

  • 1 - 17.5 oz. 5 count container Pillsbury Grands! Pumpkin Spice Rolls
  • 10 slices Hatfield Pumpkin Spice Thick Cut Bacon
  • 3 cinnamon sticks cut in half

Instructions
 

  • Working in batches, cook bacon in a large skillet over medium heat. Turn occassionally while cooking. Cook just until crispy, about 10 minutes. Set aside on paper towels to drain.
  • Preheat oven to 350 degrees and grease a round baking pan.
  • Remove cinnamon rolls from container and set aside icing. Separate and unroll cinnamon rolls. Then, place two strips of bacon onto each cinnamon roll and roll back up.
  • Wrap cinnamon rolls with food grade twine to create pumpkin shape. Wrap loosely and tie at the top.
  • Place cinnamon rolls onto prepared baking pan. Bake 25 minutes, or until golden brown.
  • Remove twine from each cinnamon roll. Spread icing onto each cinnamon roll.
  • Place cinnamon stick in center of each cinnamon roll. Serve warm.

Aren't these just the cutest? If you have leftover cinnamon rolls after serving, store them in the fridge in an airtight container. They should be good for about a week. Individual cinnamon rolls can be warmed up in the microwave for about 25-30 seconds.
