As the weather starts to warm up and the days are once again filled with an abundance of sunshine, I find myself craving lighter dishes packed with fresh fruits and nourishing ingredients. Those heavier meals enjoyed during the winter months are now traded for more colorful and refreshing options - salads, in particular. With so many delicious fruits in season right now, it’s easy to create a fruit salad packed with juicy, sweet flavors.
Strawberries and pineapples are currently in season, so I recently decided to create a tropical-inspired fruit salad bursting with bright fruit flavors and a creamy Greek yogurt base. The combination of sliced strawberries, diced pineapple, and shredded coconut creates a tropical flavor profile that’s perfect for spring and summer. It makes a great light breakfast, afternoon snack, or dessert that will keep your sweet tooth satisfied.
This Tropical Strawberry Coconut Pineapple Yogurt Salad is super easy to make. The fruit is gently tossed in Greek yogurt and chilled briefly to allow the flavors to meld together. Just before serving, it’s topped with fresh mint leaves for a bright, refreshing finish. It’s a wholesome fruit salad made with natural sweetness and an added hint of tang and boost of protein from the Greek yogurt.

This salad is best made shortly before serving, but allowing it to chill in the refrigerator for about 20 minutes helps enhance those tropical flavors. Whether you’re making it as part of a refreshing spring brunch (it would be perfect for Mother’s Day!), a light breakfast or lunch, or an easy snack, this fruit and yogurt salad comes together quickly with fresh flavor in every bite.
This is an incredibly easy fruit salad to make. Once the fruit is prepped, add it to a medium mixing bowl and gently stir it to combine.
Then, add plain Greek yogurt, honey, and fresh lime juice to a small mixing bowl and stir to combine.
Now, gently fold the yogurt mixture into the fruit mixture just until everything is evenly coated. If desired, chill the salad for about 20 minutes in the fridge so the flavors meld together nicely. Serve the salad with some fresh mint leaves on top for a refreshing finish.
