I haven't always been the biggest fan of cereal.  But something changed last year and I realized that I actually do enjoy eating it!  Of course, I still prefer to have a bowl for lunch, dinner, or as a late night snack.  However, on occasion I'll pour myself a bowl for breakfast.  My husband, on the other hand, eats cereal every morning.  So the cereal boxes tend to stack up on top of our fridge.

We aren't huge fans of sugary sweet cereals (other than the box of Lucky Charms that I plan on using in a recipe, but can't stop eating).  We tend to stick to the healthier marketed varieties - gluten-free, wholesome ingredients, no artificial flavors. One of my absolute favorite cereals ever, ever, ever is Rice Chex!

What makes Rice Chex taste so good to me?  I don't know!  But I could eat bowl after bowl of it!  The one thing I really love about Rice Chex is that it's not just great for breakfast.  You can use Chex cereal for snack mixes, cereal bars, and even as a gluten-free breading for chicken.  It's pretty versatile!

I had a package of chicken tenders to make, so I decided to coat them in a Parmesan seasoned Rice Chex mixture.  It's an easy way to bread chicken or other meat without using bread crumbs.  Since I've started eating a dairy-free diet, I used Violife Just Like Parmesan instead of regular cheese.

Air Fryer Rice Chex Chicken Tenders

These chicken tenders are quick to prepare and are ready in a flash when cooked in the air fryer!  It's an easy weeknight dinner that's fun to eat and best served with a sauce or two for dipping!

The first you need to do is mix up your seasoned Rice Chex breading.  Grind the Rice Chex until it's a Panko-like texture and put it in a shallow dish or bowl.  Then, mix in Parmesan, paprika, garlic, and a pinch of cayenne.  Beat two eggs in another dish and then you can start preparing your chicken.

Dip each piece of chicken into the egg.  Then, coat it in the Rice Chex mixture.  I like to press the chicken into the Chex mixture making sure it's evenly coated.  Now, you can place the chicken tenders into the air fryer basket.

Depending on the size of your air fryer, you may need to work in batches.  Set the air fryer to 400 degrees.  Then, cook the chicken for 5 minutes, flip, and cook for another 5 minutes on the other side or until it's golden brown and cooked through.

Serve the chicken tenders with your favorite dipping sauces and a side of fries or a salad (we had a tomato salad) for a healthier option.

Ingredients
  

  • 1 lb. boneless skinless chicken tenders
  • 2 cups Rice Chex ground into Panko-like consistency in food processor
  • 1 cup grated Parmesan cheese
  • 1/4 tsp. paprika
  • 1 tsp. garlic seasoning
  • Pinch of cayenne or chili powder
  • Salt and pepper to taste
  • 2 large eggs
  • Cooking spray

Instructions
 

  • Set air fryer to 400 degrees.
  • In a shallow plate or large bowl, mix the Rice Chex, Parmesan cheese, paprika, garlic, and cayenne.
  • Beat the eggs in another shallow dish or bowl and season with salt and pepper.
  • Dip chicken into egg. Coat chicken in the Rice Chex mixture, pressing to make sure each piece is evenly coated.
  • Place the chicken into the air fryer basket, working in batches if necessary, and spray lightly with cooking spray.
  • Cook for 5 minutes, then flip and cook for another 5 minutes or until golden brown on the outside and cooked through.
  • Serve with your favorite dipping sauces.

Notes

Need to reheat these chicken tenders? Pop them back in the air fryer and cook for about 3 minutes at 400 degrees.

You can't taste the cayenne in the Chex breading, but feel free to omit it if you're not a fan of heat or want to make this recipe absolutely kid-friendly.  Either way, this a recipe the whole family will love!
