There are a few foods that I only seem to eat around St. Patrick’s Day – corned beef, Irish soda bread, and Lucky Charms.  I know that Lucky Charms are technically a year round cereal, but the mascot is a leprechaun and, among the many different marshmallow shapes, there are clovers.  Two very obvious St. Patrick’s Day symbols.  So you can see why I grab a box as part of our celebration!

That said, I have secured my box of magic deliciousness for this St. Patrick’s Day.  And while I’ve enjoyed some of this sweet cereal for breakfast, I wanted to turn it into a fun and festive treat.  Everyone loves marshmallow cereal treats!  But these St. Patrick’s Day treats are just for the grown ups!

I’ve turned Lucky Charms into a boozy adult treat for St. Patrick’s Day!  These Lucky Charms treats are made just like Rice Krispie Treats.  But after the butter and marshmallows are melted down, bourbon gets added to the mixture.  Then, the cereal gets stirred in and spread into a pan to cool before cutting into squares.

If you’re looking for an adult treat to make for St. Patrick’s Day or want to end your meal with something sweet, these Lucky Charms treats are quick and easy to make!  Just melt, mix, and cool your way to a fun and delicious St. Patrick’s Day dessert!

Let’s start these treats by spraying a 9×9″ baking pan (use a 9×13″ pan for thinner treats) with nonstick cooking spray.  Then, grab a large pot and add the butter.

Melt the butter over low heat and once the butter is completely melted, add the bag of marshmallows.  Keep stirring the marshmallows until they’re completely melted. Then, take the pot off the heat and add the bourbon.

Now, we’re going to gradually fold in the cereal so everything gets good and coated in marshmallow.

Spread the cereal mixture into the prepared pan.  Use a rubber spatula, or your hands, to press the cereal evenly into the pan and allow it to cool completely.

Once the treats are cool, cut them into squares and serve.

Ingredients

  • 3 tbsps. butter
  • 1 - 10 oz. package mini marshmallows
  • 2 tbsps. bourbon, or whiskey
  • 8 cups Lucky Charms
  • Non-stick cooking spray

Instructions

  1. Spray a 9x13 inch pan with cooking spray and set aside.
  2. In a large saucepan, melt the butter over low heat.
  3. When the butter is completely melted, add the bag of marshmallows and stir consistently until completely melted.
  4. Take pan off of heat and add the bourbon.
  5. Gradually fold in the cereal until it's completely incorporated into the marshmallow mixture.
  6. Press the cereal mixture evenly into the prepared pan.
  7. Allow the treats to cool before cutting into squares.

Make these treats kid-friendly by omitting the bourbon.  If you want to zhuzh them up, dip them in white chocolate or add some St. Patrick’s Day sprinkles on top!
