Greek yogurt has become one of my favorite things to keep in our fridge. In fact, I've been buying a giant container of it almost every week because I've been using it so much! I've been meal prepping fruit, granola, and yogurt parfaits on a weekly basis. I've also been using it to moisten cakes, as a substitute for sour cream, mixing it into salad dressing recipes, and turning into simple dessert dips for fruit.
With Easter coming up this weekend, I've been toying around with recipes to serve. We're having lunch with my in-laws that afternoon and dinner with my side of the family later on in the day. I've been stocking up on veggies - like green beans, Brussels sprouts, and carrots - to make sides.
Knowing I'd have leftover carrots in the house, I decided to put them to good use and create a carrot cake inspired Greek yogurt dip - something I could snack on during the week with fruit.

This carrot cake dip is sweet with spices that give it that classic carrot cake flavor. Greek yogurt and cream cheese (use regular, low fat, or Neufchatel cheese) give this dip a creamy texture. And, of course, it wouldn't be carrot cake without the carrots, so grated carrots are mixed into this dip for an authentic and healthy addition.
Carrot Cake Greek Yogurt Dip
If you're looking for a last minute Easter recipe, this carrot cake dip would be great with a fruit platter during dessert. Try serving it with seasonal fruit like strawberries, blueberries, and pineapple. You could also serve it with graham crackers (bunny shaped graham crackers would look sweet for Easter), Nilla wafers, pecan sandies, or pretzels for a salty-sweet combo.

This recipe is just a matter of making the creamy base and mixing in carrots and spices. So to start, we need to beat the Greek yogurt, cream cheese, powdered sugar, and vanilla extract together just until it's smooth.

Then, we're going to stir in the cinnamon, nutmeg, ginger, and pinch of salt. Once that's mixed in, fold in the carrots and nuts.
Let the dip sit in the fridge for about 30 minutes. This will help the ingredients come together to give you that carrot cake flavor.

- 1/2 cup carrots peeled and grated
- 1/4 cup walnuts or pecans chopped

Instructions
- In a medium mixing bowl, beat together the Greek yogurt, cream cheese, powdered sugar, and vanilla just until smooth.
- Stir in the cinnamon, nutmeg, ginger, and pinch of salt. Fold in carrots and nuts.
- Cover dip and refrigerate 30 minutes so flavors can blend together.
- Spoon dip into a serving bowl and serve with dippers such as fresh fruit, graham crackers, or cookies.
