Chocolate Raspberry Blossom Cookies

These Chocolate Raspberry Blossom Cookies are made with a sweet raspberry sugar cookie base and topped with a Hershey's milk chocolate kiss.  They're a perfect treat for Valentine's Day or any day of the year!

One of my favorite cookies that I made this past Christmas were Grinch Blossoms.  They were a fun Grinchy twist on classic blossom cookies made with a green sugar cookie base, a Hershey Kiss on top, and finished with a red heart sprinkle.

With Valentine's Day just a few days away, I started thinking about other types of "blossom" style cookies I could make as a last minute treat.  I thought about classic Valentine's Day flavor combinations like chocolate and strawberries, but decided on chocolate and raspberries.

I have nothing against chocolate-covered strawberries, but there's just something so beautiful about the way chocolate and raspberries work together.  There's the sweetness of chocolate and the slightest tartness of juicy raspberries. It's an irresistible flavor combination!  So I decided to make Chocolate Raspberry Blossom Cookies.

Chocolate Raspberry Blossom Cookies

These cookies start with a simple sugar cookie base that are flavored with raspberry and rolled in sugar sprinkles.  After they bake, a Hershey Kiss is pressed into the center of each cookie.  This delicious Valentine's Day treat is one you'll want to enjoy all year long!

I used a pouch of Betty Crocker sugar cookie mix to make my cookie base.  It's one of my favorite cookie mixes to use and also helps cut time.  So to make the sugar cookie base, I added the sugar cookie mix, an egg, butter, and the raspberry syrup to my mixer and mixed just until dough formed.

I had a hard time finding raspberry extract, so I ended up using Torani Raspberry Syrup instead.  It was easy to find in the grocery store, a lot cheaper than the extracts being sold online, and adds great flavor.  Plus, I get to use the rest of it in my coffee!  Yum!

Once the cookie dough was mixed, I started forming the dough into inch-sized balls.  Then, I rolled the cookie dough balls into red sugar sprinkles.  You could also use pink sprinkles, if you prefer.

Place the cookie dough onto parchment paper lined baking sheets and bake for about 8 minutes, or just until they're set.

Remove the baking sheets from the oven and immediately press Hershey's kisses into the center of each cookie.

Transfer the cookies to wire racks to cool completely.  Enjoy once cooled or store in airtight sealed containers in a cool, dry place.

Ingredients
  

  • 1 - 17.5 oz. sugar cookie mix pouch
  • 1 stick butter softened
  • 1 egg
  • 1 tbsp. raspberry syrup
  • Red food coloring
  • 1/4 cup red or pink, sugar sprinkles
  • Hershey's Kisses milk chocolate or milk chocolate meltaway, unwrapped

Instructions
 

  • Preheat oven to 375 degrees and line baking sheets with parchment paper.
  • Stir cookie mix, butter, egg, raspberry syrup, and a few drops of red food coloring together until dough forms.
  • Shape the dough into 1 inch balls and roll in the sugar sprinkles.
  • Bake 6-8 minutes, or until the cookies are set.
  • Press a Hershey's Kiss in the center of each cookie.
  • Then, transfer the cookies to wire racks and allow to cool completely.
