Let me preface this post by saying that I am and will always be a lover of the snow.  That said, it's just been TOO MUCH over the past month!  I wanted snow this winter, but not all at once!  The snow has waited until the very end of the season to absolutely pummel us!  I guess it's like they say - be careful what you wish for.  All of the snow actually had me prematurely dreaming about lush green grass, open windows, and starting our garden.  I guess it's a good thing that spring officially starts this weekend!

We've had our garden for years, but last year I realized just how important it was to grow our own food.  Our garden became a game changer in the midst of the pandemic.  I was incredibly thankful to be able to pick fresh vegetables for salads, make homemade zucchini and eggplant parmesan, and snack on peas and peppers.  I knew where our food was coming from and it was right there in our backyard.

Last year was a great growing season!  I wasn't a huge fan of our sweltering hot temperatures, but our plants certainly were!  We were able to share plenty of fresh vegetables with our family and neighbors.  Our herbs really took off too and at the end of the season, I was able to use our dehydrator to turn some of our herbs into homemade spice blends.

How to Create an Edible Herb Garden

We have our veggie garden planned for this year, but I want to concentrate on growing an abundance of herbs.  We have one planter box dedicated to different types of basil.  I've been thinking about dedicating our other planter box to oregano.  But I would also like to round out our garden with a collection of edible herbs that will really compliment our vegetable garden.

I will be growing some fragrant herbs like eucalyptus and lavender to add to cut flower arrangements and dry in herb bundles.  But the majority of our herb garden will be edible herbs that we can cook with and dehydrate to make our own seasoning blends at the end of summer.  Some will be started by seed and some will be grown from starter plants.

Herbs like basil, thyme, oregano, and rosemary are staples in our garden.  But this year, I would like to add a few new (and returning) herbs to our garden like stevia (a great sugar alternative), lemongrass (delicious in Asian cooking and a natural mosquito repellent), and dill (not only great for homemade pickles and hummus, but our butterflies love it too).
