My little pot of fresh dill is growing out of control! I seriously can't use it fast enough!  So I've been trying to add it to dishes or make dips with it.  Since we've been doing a lot of healthy snacking around here lately and had a fridge full of veggies, I decided to make a dill pickle flavored hummus.

Pickle-flavored everything is still an ongoing food trend, but what I love about this hummus is that it's not in-your-face pickle flavor.  The flavor is there, but it doesn't overpower the hummus and veggies you dip into it.

I invited my sister over to try this hummus the day I made it.  I knew she liked pickle-flavored snacks, so this was right up her alley!  This recipe turned out so good that my sister and I devoured almost the entire bowl, plus a whole bunch of cut veggies, and a small bag of homemade pita chips (see how to make them in the air fryer here)!

Based on the bowl that we pretty much inhaled, I'd say I did a good job with this hummus!  It's one I'll be making again (and again) all summer long with our garden dill.  My in-laws are growing cucumbers in their garden, so hopefully I'll be able to amp up the freshness level of this recipe even more!

Garden Dill Pickle Hummus

This hummus starts with a classic recipe of chickpeas, tahini, garlic, lemon, and olive oil. I've seen other pickle-flavored hummus recipes add chopped pickles and a little pickle brine into the hummus.

I didn't want to overpower my hummus with pickle flavor or add any additional salt to it.  I wanted fresh, straight-from-the-garden flavors!  So instead, I chopped up fresh cucumber, dill, and threw in a little white vinegar.

Ingredients
  

  • 1 - 15 oz. can chickpeas rinsed and drained
  • 2 tbsp. tahini
  • 1 clove garlic minced
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. white vinegar
  • Generous 1 tbsp. fresh dill chopped
  • 1/2 cup cucumber seeded and chopped
  • Salt and pepper to taste
  • Pinch of crushed red pepper
  • Veggies and/or pita chips for dipping

Instructions
 

  • Add chickpeas, tahini, garlic, olive oil, and white vinegar to a food processor or blender.
  • Pulse until smooth.
  • Once hummus is smooth and creamy, add fresh dill, cucumbers, and crushed red pepper.
  • Season with salt and pepper and pulse again until the rest of the ingredients are fully incorporated.
  • Spoon the hummus into a bowl, drizzle it with a little olive oil, and top with chopped fresh dill, if desired.
  • Serve with veggies or pita chips for dipping.

Notes

Tip: If the hummus needs to be thinned out a little more, add a tablespoon of water at a time until it's smooth.

Hummus is a quick and easy dip that makes healthy snacking fun!  Moms, if your kids like pickles, you might even get them to eat their veggies with this dip!  It's low salt, low cal, and whips up in minutes!

Here's a tip: make it a day ahead of time and let those flavors sit and meld together.  The longer it sits, the better that dill pickle flavor gets!
