Jackfruit Ramen Noodle Stir Fry

I am having a total ramen noodle moment.  I'm completely obsessed with these 50 cent packages of noodles.  The funny thing is, I hardly ever eat them as soup!  I've been cracking open the package, discarding the seasoning, and whipping up some quick ramen noodle bowls for lunch or adding them to stir fries for dinner.  I'm telling you, ramen noodles can amp up a dish in minutes!  No wonder they're the official staple of college kids and TikTok fans everywhere!

A few weeks ago, I had no idea what to make for lunch.  Then, I remembered the packages of ramen I had purchased.  So I took the noodles out of the package, chucked the seasoning packet, and boiled them up. I also had some canned jackfruit and fresh veggies to use.  I threw the cooked ramen, jackfruit, and veggies together in a skillet with sesame oil, ground ginger, and coconut aminos.  It was absolutely delicious!  So delicious that I've made this dish a couple more times since then!

Jackfruit Ramen Noodle Stir Fry

I've said it before and I'll say it again - sometimes the simplest dishes can be the most delicious and this plant based ramen dish is one of them!  One package of ramen noodles is two servings, but when it's bulked up with jackfruit and veggies, it's more like four.  If you're looking for a new dish to meal prep, this would be perfect!

The first thing you want to do is cook your jackfruit.  Add a little olive oil to a skillet and cook the jackfruit until it can easily be broken apart.  Let it cook just until it starts to brown on the edges and remove it from the pan.

Add some more olive oil to the skillet.  Then, toss in your veggies.  I don't like my veggies to be too soft, so I didn't cook them for too long before tossing the jackfruit back into the skillet.

While the veggies and jackfruit were cooking, I boiled up my ramen noodles.  They only take a couple minutes to make.  Once they were cooked, I immediately drained them and added them to the skillet.

The last thing I did before grabbing a bowl was whip up an easy sauce.  To do this, I stirred coconut aminos, ground ginger, and a splash of sesame oil together.  Then, I poured it over the skillet and used tongs to give everything a good toss.

And that's it!  All that was left was to load up a bowl and top it with some chopped green onions and a drizzle of Sriracha sauce!

Ingredients
  

  • 1 - 30 oz. package Ramen noodles seasoning packet discarded
  • 1 - 20 oz. can young green jackfruit in brine drained
  • 2 tbsp. extra virgin olive oil
  • 1 clove garlic minced
  • 1 cup white mushrooms sliced thin
  • 3/4 cup sugar snap peas cut in half
  • 1/2 cup red bell pepper cut into strips
  • 1 cup broccoli florets
  • 1/4 cup coconut aminos
  • 1/2 tsp. ground ginger
  • Splash of sesame oil
  • Optional: Sriracha sauce chopped green onions

Instructions
 

  • Heat about a tablespoon of olive oil in a skillet over medium heat.
  • Add the jackfruit and cook about 10-15 minutes, covered, until the jackfruit is soft enough to break apart easily and begins to brown on the edges. Remove from skillet and set aside.
  • Add another tablespoon of olive oil to the skillet. Then, add the garlic, mushrooms, snap peas, bell pepper, and broccoli florets and cook for about 5-8 minutes, or until tender-crisp.
  • Add the jackfruit to the vegetables and lower the heat.
  • While the vegetables cook, bring a pot of water to boil. Add the ramen noodles and cook for about 2 minutes. Drain immediately after they're cooked and add to the skillet.
  • In a small bowl or measuring cup, stir the coconut aminos, ginger, and a splash of sesame oil together.
  • Pour the sauce into the skillet and serve immediately with Sriracha sauce and chopped green onions.

The noodles will soak up most of the sauce, but you can always add more coconut aminos at the end.  Personally, I think the sauce adds just enough flavor without overwhelming the rest of the dish.  I do like to add a drizzle of Sriracha before eating just to spice things up!
