I've been trying to snack better lately and add fresher ingredients into my diet on a whole.  So I've been keeping mini cucumbers in the fridge to slice up and eat as a snack.  I love dipping cucumbers into things like hummus or fresh salsa.  But I thought it might be fun to turn my cucumber snack into a whole new cucumber snack!

Of all the dips I like to eat, salsa is definitely my favorite.  Especially when it's made with freshly chopped tomatoes and veggies, like a pico de gallo.  Since I had quite a few cucumbers in the fridge, I decided to make a Fresh Cucumber Dill Salsa!

You've probably seen fresh pickle salsas advertised before, like Pickle De Gallo, but I have yet to find it in a store near me.  But after making this recipe, I think I've stopped my search for a pickle inspired salsa!

You could use a regular cucumber to make this salsa, but I usually have mini cucumbers in the fridge.  They're the perfect bite-size when sliced, the skin isn't as tough, and they're still just as hydrating and nutritious as a regular cucumber.

Fresh Cucumber Dill Salsa

This Fresh Cucumber Dill Salsa is a delicious new way to snack on cucumbers!  All you need to whip up this easy salsa is fresh dill, cucumbers, tomato, red bell pepper, onion, and a few other simple ingredients.  Just chop, mix, and enjoy this salsa with fresh veggies or your favorite chips and crackers!

After the ingredients have been prepped, add the cucumber, tomato, bell pepper, onion, and garlic to a mixing bowl.  Give everything a quick stir.

In a small bowl, stir the vinegar and sugar together until the sugar has dissolved.  Pour it into the mixing bowl.

Now, we're going to stir in the fresh dill and season the salsa with salt and pepper.

Store the salsa in the fridge for at least 30 minutes before serving.  The longer it sits, the better it'll be!  Then, serve the salsa with chips, crackers, or sliced veggies.

Ingredients
  

  • 3-4 mini cucumbers seeded and diced
  • 1 small tomato seeded and diced
  • 1/2 red bell pepper seeded and diced
  • 1/4 cup red onion diced
  • 1 clove garlic minced
  • 1 tbsp. white vinegar
  • Pinch of granulated sugar
  • Generous 1 tbsp. fresh dill chopped
  • Salt and pepper to taste
  • Chips crackers, or sliced veggies for dipping

Instructions
 

  • In a medium mixing bowl, add the cucumber, tomato, bell pepper, onion, and garlic. Stir to combine.
  • In a small bowl, stir the white vinegar and sugar together. Add to the mixing bowl.
  • Stir in the fresh dill, season with salt and pepper, and chill in the fridge at least 30 minutes before serving.
  • Serve with chips, crackers, or fresh veggie slices.
