Every year around Passover, the grocery stores around here offer a free box of matzo (like a big 4 or 5-pound box) with purchase. It's a main part of the Passover seder and is eaten throughout the duration of the holiday. I am not Jewish, but every year, I end up bringing a box home. I just really love a good matzo cracker!

Matzo is an unleavened flatbread. The crackers are actually pretty bland, but I find them to be the perfect, crispy base for all kinds of spreads and dips. I've even used them as a crust for a thin, cracker-style pizza in a pinch. Most recently, I decided to slather a matzo cracker with some hummus. From there, I decided to go bold and continue layering some Greek inspired ingredients on top.

I took one big cracker and left it whole (as opposed to breaking it apart and using the pieces as dippers). Then, I slathered the cracker with hummus. After that, I topped the cracker with pickled onions, kalamata olives, grape tomatoes, and feta cheese. I sprinkled some fresh oregano on top (it's growing again in my garden) for garnish and a bit of extra flavor.

Get creative with the toppings like adding a pinch of crushed red pepper for a little kick, using different hummus flavors, or adding other ingredients like marinated artichokes or sun-dried tomatoes. You could even toast the matzo before layering for extra crunch.

The first thing we need to do is slather a matzo cracker with hummus. Use as much or as little as you like. I like to add just enough to ensure the rest of my toppings stay put.

With the hummus spread on the cracker, I added the pickled onions, olives, tomatoes, and feta cheese on top. Then, I sprinkled a tiny bit of fresh oregano on top for a little extra color and flavor.

Serve the matzo immediately and enjoy! This Greek layered matzo can be eaten as a snack or as a light lunch. I like it as a girl lunch or girl dinner. It's even nice with a small green salad on the side.

Ingredients
  

  • 1 matzo cracker
  • 2 tbsps. lemon hummus or your favorite flavor
  • 2 tbsps. pickled onions
  • 10 pitted Kalamata olives halved
  • 4-5 grape tomatoes halved
  • 1 1/2 tbsps. feta cheese crumbled
  • Optional: fresh oregano chopped

Instructions
 

  • Spread hummus evenly onto the matzo cracker.
  • Add the pickled onions, olives, tomatoes, and feta cheese on top.
  • If desired, sprinkle chopped fresh oregano on top.
  • Serve immediately.
