This hearty Harvest Chicken and Fig Salad is made on a bed with Romaine lettuce and topped with rotisserie chicken, fresh figs, crispy prosciutto, onion, feta cheese, walnuts, and a homemade honey mustard dressing.

	It is fig season once again! And I have been tearing through containers of figs on a weekly basis. In fact, my fig fruit habit has been so fierce this year that I actually went out and bought a fig tree. Now, we probably won't get fruit for another year or two, but at least I can dream about having an abundance of figs in my future - right from my own backyard!
While I love eating figs just as they are (or with a bit of cheese), I also like using them in different recipes. Like salad. Have you ever sliced up some figs and tossed them into a salad? So good! It's a bit of a sweet and savory experience and, if you're still hanging onto every little bit left of summer, it's a good way to transition from summer to fall flavors.
			
			
		
	While we've been transitioning into more fall-like dishes, I've been adding oven-friendly meals back into our meal plan. Like rotisserie chicken. I'll reheat the chicken in the oven, then use the leftovers for lunches or an entirely different meal. That's how this salad came about. I used leftover rotisserie chicken and tossed in some fresh figs, along with a few other ingredients, and dressed it with a homemade honey mustard dressing.
Harvest Chicken and Fig Salad
If you're like me and embracing all of those fall flavors that are back, you're going to love this chicken and fig salad! It's light enough for a lunch and can easily be turned into a dinner served with some crusty bread on the side. While I used rotisserie chicken to make this, you can swap in grilled boneless, skinless chicken, as well.
			
			
		
	The first thing we're going to do crisp up our prosciutto. Place the prosciutto slices on a baking sheet. Then, bake it in the oven, at 425 degrees, for about 5 or so minutes. You want it crispy enough to break up into pieces. Once baked, allow the prosciutto to cool.
			
			
		
	Now, we can assemble our salad. Add the Romaine lettuce, chicken, crispy prosciutto, figs, red onion, crumbled feta cheese, and walnuts to a large serving bowl or salad bowl.
			
			
		
	Whip up a quick dressing. Add honey mustard, apple cider vinegar, garlic powder, salt and pepper, and olive oil to a small bowl and whisk to combine. If you want to thin the texture a bit more, add a splash more of apple cider vinegar. Next, drizzle the salad with the dressing.
			
			
		
	Gently give the salad a toss to coat with the dressing. Serve with extra dressing on the side.

Harvest Chicken and Fig Salad
Equipment
- 1 large baking sheet
 
Ingredients
For the salad:
- 2-3 slices prosciutto
 - 4 cups Romaine lettuce chopped
 - 1 cup rotisserie chicken shredded or chopped
 - 4 fresh figs quartered
 - 1/4 red onion sliced
 - 2 tbsps crumbled feta cheese
 - 2 tbsps. chopped walnuts
 
For the dressing:
- 2 tbsps. honey mustard
 - 1 tbsp. apple cider vinegar plus more as needed
 - 1/4 tsps garlic powder
 - 2 tbsps. olive oil
 - Salt and pepper to taste
 
Instructions
- Preheat oven to 425 degrees. Place prosciutto slices on the baking sheet and bake about 5 minutes, or until crispy.
 - Remove from oven and let cool. Then, break into pieces or crumble.
 - Add lettuce, chicken, prosciutto, figs, onion, feta cheese, and walnuts to large salad bowl.
 - In a small bowl, add honey mustard, apple cider vinegar, garlic powder, salt and pepper, and olive oil. Whisk to combine.
 - Drizzle dressing over salad. Toss gently to coat.
 - Serve salad immediately with extra dressing on the side.
 
			
			
		
	This salad is simple, yet so satisfying! It's incredibly easy to make and includes a medley of flavors that will welcome the fall season. For a vegetarian version of this dish, add tofu or chickpeas. And instead of walnuts, pecans would also give it some delicious fall flavor.
